Should I buy a used DCS 48 inch gas range?

DCS 36inch All Gas Range
Comments (12)I had a 48" DCS rangetop that I installed 3 years ago. I chose it for the BTUs and never had any problems that needed repair. The simmer was great. Full blast wok cooking was fab. Wish my Vent-A-Hood had been able to keep up with it. I found the griddle disappointing as it heated very unevenly and took a long time. I wouldn't choose DCS again because the flame diameter was too wide. It was fine for the wok or very large (10+inch) diameter pans, but sometimes you just want to cook a box of mac and cheese in a smaller pan. I had to do it with the heat on low or the flame would overshoot the sides of an 8 inch pan. Not a complete deal breaker, I know, but if you have 18,000 BTUs, you want to crank it up! So anything that wasn't a "Big Job" that needed a big pan (say, one egg in a six inch skillet?) took a lot longer. This was also a problem with the back burners. The SS backsplash was immediately discolored due to flame overshoot no matter what size pan I used. Yes, the gas was correctly adjusted. I think the biggest problem was the grate sits too low and the burners sit too high. I have since moved into a house with a brand new Dacor Epicure dual fuel (came with the house) and I thought I would have the same problem. I don't because the grate sits higher and/or the burner sits lower. So I can crank the Dacor up full blast (same BTUs as my DCS) with the same pans I had to put on low with the DCS. I am still getting used to the Dacor, so I am not saying it is the final word, but it has given me something to compare to the DCS....See MoreHow do you use your large range? 48 inch or larger
Comments (10)First off, it sounds like you don't have any need for a larger range. You have the perfect size for you. I have a 48" blue star heritage with raised grill and a salamander. But we entertain family and friends A LOT. F&F with multiple needs and desires. Vegans, Veg, full on meat lovers. People with allergies or dietary constraints. So we'll find on any given day, making multiple meals/choices for guests. Say....less spicy red beans and rice,polenta, spicy shrimp, alligator gumbo and then a full on spicy red beans and rice with sausage. Or pasta, gnocchi with fresh herbs, sweet potato gnocchi, two types of sauces and something meat or fish. Or whatever meets our fancy but must be constructed to fit family and guests. Some days I use very few burners and never use the griddle. Other days I use them all. We have multiple cooks in the family and a few real life chefs in the extended. The range is there for when it's needed....and beloved by all.(I love it when friends come over and it's a huge party around the range) For us a big range works. But that's the point...a range NEEDS to fit you and your lifestyle. Anyone can cook on anything. But overkill is overkill and nothing but waste. Comments (3)In general: I have had open and closed burner gas tops and closed are 100% easier to clean, I would never never get open unless I had daily cleaning help. The BTU rating on the highest burner is important, as well as a very small BTU simmer burner. I also need continuous grate to slide a pot over, and prefer mechanical knobs to electronic keypads. There are some cooktops where the grates are too high off the burners and there are complaints of a feeling of under-powered burners despite the BTU rating. I think this whole open burner for the home thing is nothing short of ridiculous, it is more of a high volume restaurant issue, but his is gardenweb... I do not like the performance of gas ovens. I like electric and I love the functionality of convection. I would never buy an oven without convection. Comments (24)I really like the Wolf range but never even looked at ranges at all before this week because of price/oven issue. However, that was before I found this deal which put it in my upper price range. So I'm trying to research the range and look at it realistically vs getting swayed just by the price. If I didn't get the range, I would be buying the Kenmore double convection oven with Wolf 5 burner gas cooktop. Not sure if Wolf range ovens would be better or not. I do LOVE the cooktop part of the range and the "wow" factor however just concerned with oven heights. However, I would have the steam oven at perfect level above the warming drawer so that may offset the lower ovens on range. I live in southern TN. Not that I want this to influence my decision, but houses in my neighborhood (range from 500k-3 Million) do have majority high end appliances. So even though we don't plan on selling , I believe the Wolf range would fit the house better... However, for me personally, I would be happy with both scenarios.
