How to get raves on dinner? Stop trying...

It was a simple dinner for the picky eater's birthday. It got such raves!! Mr. Picky liked it, but the others were raving! I would have guessed it's just that they don't usually choose battered fried shrimp, so it was a treat, but they even raved about the salad.


The starter was white corn on the cob, full grown. Roasted according to Google (I would have done them in the husk in the steam oven at home), at 450° F/25min., shucked, in foil with a smear of vegan soft margarine (salted). I wasn't so sure about the marj, but it helped it achieve a nice toasty color, here and there.


The shrimp was Trader Joe's frozen peeled and cleaned red shrimp, halfway thawed, in Genius Kitchen beer batter (scant measure on the salt), fried in a cast iron frying pan in safflower oil. Super easy. I'd fed it to Picky before, so I knew he'd like it. The others LOVED it.


The salad was Persian cucumber, scallions, haricots verts (raw, chopped), avocado, wild arugula and mixed baby lettuce, with a couple chopped Love Beets ready to eat red beets (mild vinegar flavor). The dressing was just from what they had on hand: red wine vinegar (Pompeian, nothing fancy), EVOO, S&P and Mrs. Dash. Raves I tell you!


I can't remember when I've made an easier roadshow dinner. Of course a big part of it is that shrimp cooks so fast! I don't remember when dinner has gotten such over the top raves. Like as many of them as I've said "rave" in this post. For such a nothing. Why bother working at it when people are so thrilled with simple?
