Skim Coat over Textured Drywall--What to Use

Our 1931 house has lath and plaster walls with a fairly heavy texture. Due to structural issues, we had to remove most of the plaster downstairs. We wanted to try to match this texture to keep the house looking original. Long story short, the drywaller sprayed a fairly heavy knock down texture that looks awful. Now we need to cover it up with a trowel finish that won't match what's upstairs and in the stairwell but at least will look period appropriate and not induce nausea.

After much reading, I still can't determine if we should use a joint compound or an actual gypsum or lime plaster mix to skim coat over the textured drywall. If the final product came out close to some version of white/off white without needing paint, that would be an added bonus since we like the look of unpainted plaster walls.

Can you please make a recommendation for what product(s) would work for this?

FWIW, the drywall used is not blue board.
