Thanks, Dan. My island is smaller than yours. But your point considered. Here is what I have so far. It will be 6x Cree LR6 lights. I have made one mistake in this layout, since I did this in a slight perspective instead of true plan view. It's a bit off, in reality the light in the corner cabinet will almost be touching, due to the shape of it. So I need to move that one or have it more over the sink instead. Or it should be at least about 25" away from each wall above the counter corner. I think installing the lights centered almost 25" (counter width) should be OK? It should still cast some lights onto the counters. I have decided, to install the lights after the cabinets are in place, less surprises that way.. like accidently placing lights too close to the cabinets.

Thank everyone, such kind words! And I'm dying over here with the 50 Shades of Super White comment, too hilarious! Thus far, the counters have held up completely perfectly. We have had alot of parties with countless red wine bottles and glasses, even having 15 people over last night. We've even made the cardinal sin of having wine rings on the counter the morning after. The result? They wipe right off and leave no stain or etch whatsoever! They did seal them prior to install, and again afterwards, but I don't know what it was. It left them a bit splotchy so I used the daily cleaner and polished them up nicely. We were freaks about cleaning things at first, but have eased up quite a bit. As of now, I have no fear of etching or chipping and we are over the top happy with them!

If you use lisa_a's with 2 entrances to the pantry it may just vent itself easily as I'd imagine the pocket entry door to it from the garage may stay open or ajar frequently. You could possibly fit it in the bump back to match the entrance stairs. Fridges in garages are pretty common around here but we have more issues with freezing temps than overly hot. Otherwise I'd put it in that spot in the garage where the writing says small appliances for inside the kitchen. That's not far of a walk at all.
