Salted cod recipes wanted please

While visiting with a friend of mine over the weekend we swapped some goodies. And he gave me a container of fresh salted cod that is made in the restaurant he works at. I say fresh salted because it's not the jerky stuff that comes in a wood box. This is a plastic container of cod packed in salt and cured off. My husband and I were delighted, we like this sort of thing... only it's been ages since I've been around salted cod.

It's about 1 1/2 pounds of cod, that was before I started soaking it today. I've already changed the water once, and will do so again later tonight to soak overnight.

I want to do fritters.... but there are a few recipes out there and it's been decades since I was a little girl and remember my grandmas friend making this. I know they are good. I vaugely remember them being mostly potato and fish with seasonings, but I see recipes that have a lot of flour or have a fussy amount of ingredients.

With 1 1/2 pounds of fish- can I do a "basic" recipe, and make it into 2 different flavor batches? It's just my husband and I eating these, and most recipes I see that use this much fish serve 4-6 so I'm hoping I can do two flavors.

Or... If I make a smaller batch of fritters, I could have half the meat to make a second dish with too.
