I eat low carb and wings are a favorite. I skip the flour. If you want them really crispy, bake them for a while before you fry them.

Lemon, sea salt and black Pepper Chicken wings

Grated zest of two lemons

3 garlic cloves

Lots of fresh ground coarse black pepper

Sea salt

Splash of olive oil.

Mix together and rub over the chicken wings. Either refrigerate for a few hours or roast in a 450 oven turning once or twice until cooked.

I took the zest off of two lemons, grated three garlic cloves on the microplane, and added quite a bit of fresh black pepper, coarsely ground, sea salt and a splash of olive oil. Rubbed it all over the wings and let them sit while the oven heated up to 450. Dumped them out on a cookie sheet and roasted until golden, turning once.

These are my favorite ones. I use less cayenne pepper, just for taste.

I just bake them until the skin is crispy, no flour at all. Salt and pepper sometimes smoked paprika, or maybe one of the blends from Penzeys.

YES, skip the flour! I make mine two ways: I deep fry them then heat up some Franks hot sauce with melted butter (the more butter, the more milder they become) and toss the wings in the sauce. The other night, I baked them in the oven with some McCormacks Siracha and Lime spice blend. They were delicious. NEVER flour them if you're doing low carb. You can even just sprinkle salt and pepper on them.
