My sister's little kumquat tree is on a binge producing BUMPER crops for the past two years after small crops for 20 years or more. She shares with my son (the foodie) and me. I share what I make with her. The kumquat marmalade is wonderful, and now I have tried a wonderful Kumquat quick bread with her and gave son the recipe too. We love it. I like it with whipped cream cheese for breakfast, and my sister loves it toasted with her afternoon tea.
Kumquat Nut Bread
2/3 c milk
2 beaten eggs
2 Tbsp oil
2 c flour
1 1/2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
3/4 c sugar
3/4 c pureed kumquats
3/4 c chopped nuts
Mix milk, eggs, and oil in a bowl. Mix dry
ingredients together and combine with the milk mixture. Fold in the kumquat
puree and nuts. Bake in a greased loaf pan in a 350 degrees preheated
oven for 50-60 minutes. Cool 15-10 minutes and remove from pan to cool
completely. Saves well in the refrigerator. Love it with whipped cream cheese.
