Why would someone have a secret recipe?
Comments (95)Amylou, absolutely, and on all counts. You just made me think a lot, so I wanted to acknowledge that. Thank-you! In my own cooking, if I'm using a recipe more for proportions or timing or some particular methodology, but have a thorough grasp of what it is and how it gets there, I will sometimes change it on the fly. If it sounds good, but is really new, I always make it as close to the original at least one time before I start messing with it. How can you know what it is if you don't taste it? My mother says the secret to cooking is knowing how to eat. Like the Ranch dressing example. It's not that hard to make Ranch dressing from scratch, and if you don't have any buttermilk, you can thin down mayonnaise with vinegar and/or lemon juice and make a decent substitute, but if you don't put in enough acid, a lot of herbs, garlic, and pepper and a boatload of salt it's not going to have any flavor! Nothing like the commercial stuff. Do you think it's learned helplessness? Like the otherwise loved one who takes the spoon so you can go to the bathroom, but only kind of slides it around without really stirring or getting the bottom so you won't ask for help again?...See MoreFood Floof! Comments (47)That reminds me of the time one of my stepsons, about 14 or 15 at the time, baked a cake. Now, he was pretty good with cake mixes, and in the kitchen in general, so I felt no need to supervise. His grandmother had told him that a good way to keep cakes from sticking to the pan was to line the pan with wax paper. (This was back in the early 70's.) Well, he couldn't find the wax paper (I was out of it), and he didn't bother to say anything, he just used plastic wrap instead. Getting that Saran wrap off the bottom of that cake was quite a job! Yes, Bob and Raye, wasabi in Ranch dressing is delicious! Especially as a dip for crispy fried parmesan green beans. Georgysmom, King Ranch Casserole is pretty popular and common around here. Most people seem to like it a lot. For me, it's a take it or leave it kind of dish. There are various 'versions' of it but I can't imagine it ever being so awful as to be inedible. Unless there was a misprint in the recipe or a wrong ingredient mistakenly used. Another thing my family frequently laughs about. My husband's grandmother & I were pretty close. I written her and asked for a cake recipe she made that my husband really liked. (We lived about 150 miles apart, and this was in the mid 60's, no emails, texts, etc.) She sent it to me, and as soon as I made sure I had all the ingredients, I made it. Well, it tasted fine, but it didn't rise hardly at all, and was quite solid. It's called Buttermilk Cake, and has a lot of pecans in it. My husband and kids ate most of it not gonna let all those pecans go to waste! So, a week or so later I tried again. Same results. Now, desperate to make a good cake, I called Grandma to see if she could help me figure out what was wrong. After a fairly long conversation (paying for long distance!) she finally asked me to read her handwritten recipe to her. I did, and guess what, no eggs in the ingredients! I was inexperienced enough in cake baking (pies and cookies were, (and still are,) my specialty. Needless to say, the next Buttermilk Cake I made included the 4 eggs, and turned out wonderful. That recipe has remained a family favorite all these years. Rusty...See MoreA first world brat (me) and her first world rant (recipe websites)
Comments (65)Annie1992 — i’m with you on that grade B real maple syrup! That’s the only thing we use when we want maple syrup. That corn syrup stuff has a mouth feel that is like cardboard gelatin. I rarely buy or use Cool Whip, but one of my in-laws used to make this particular dessert with Cool Whip and strawberries because her children liked it. She use frozen strawberries but with a lot of fresh strawberries on top. I developed a fondness for it :-) I rarely buy or use Cool Whip, but one of my in-laws used to make this particular dessert with Cool Whip and strawberries because her children like it. She use frozen strawberries but with a lot of fresh strawberries on top. I developed a fondness for it :-) That Wired article on Cool Whip is funny. I do remember the polysorbate 60 from reading the list of ingredients decades ago. It really is gooood. Probably a recipe from one of those “Women’s Magazines” decades ago. I made this for a party, and to keep in the fast ingredients spirit, use canned whipped cream (one can discern)....See MoreFloof-ish. Are you a fan?
Comments (49)Yes, rob. That was sort of the premise for my whole post. The tedium of ceremony before getting to the point. Whether it be a celebration, a get together, a sporting event, a show, a class or test, a meeting, an announcement, anything. I was wondering if anyone actually enjoyed such, and if not, why it is still so prevalent to fiddle faddle around before the main event? Think gender reveals. All sorts of leading up to things, trying to build suspense, for what? if you want people to know what you are having send an announcement out. If you wanna have a party about it just do so. We're having a boy/girl! Come celebrate with us! Its that easy. It would work for most other happy events. We got married! Come celebrate with us! The kid graduated! Come to a party to celebrate! I think it would be better if people keep in mind that a lot of people only attend such events either out of obligation/guilt, or indeed to take the opportunity to get together with family and friends. I know that the bridal industry pushes the idea of a fairy tale wedding HARD so that a lot of young people think that they NEED to have such an event, and get excited for it. Thus the tradition of family and friends and friends of family showing up to suffer through, in order to get an opportunity to see each other. Why not just get married and then have such a party? Same thing with things like training or meetings. No one is there for fun. We are here because we have to be. No, I do not want to see your pretty little PowerPoint slides, unless they are RELEVENT to why I am here. I do not want to play an ice breaker. I either already know someone or will likely never work with them, so stop wasting time, get to it so I can get out. I am an adult and can either get along with everyone or at least fake it for works sake. I need no help from an ice breaker game. get to it. Or a game. I want to watch THE GAME! Not someone warbling and over embellishing the national anthem to try to make it stand out. Not a dance or cheerleading routine. The game was supposed to start as 7. Its 8:30 and nothing sports related has happened. I will for sure attend all the future weddings of my nieces and nephews that I am able. Out of OBLIGATION and GUILT, because I am their aunt and I love them. And I will make small talk and rant and rave over the decorations and how lovely the colors looked and how well done the ceremony was......then I will be thankful that it is over. I do hope I have at least one that thinks like me.........See Moreamylou321
