Artisan bread in 5 minutes a day book
Comments (17)i made my first batch with 1 cup of ww flour, 5 1/2 c unbl bread flour, 3 c water, 1 1/2 T yeast, 1 1/2 T salt, mix well, let sit 2 hours on counter..then refrigerate..i used a 5 qt ice cream bucket. pull off 1/4 to 1/3 to bake..use 1 c hot water in a pan in the stove to add steam when putting loaf in on stone or in a pan..or rolls.. allow cool bread to warm and rise until about double. preheat oven well. 450 for 40 min for most breads..20 min for most rolls..can reduce temp for smaller rolls to 350 but cook the 40 min. 425 to 450 for pizza..probalby most flatbreads as well. flour or cornmeal give a firmer crust..none makes a softer crust..experiment with flours and coatings..with flour..slash crust before baking...See MoreMy Bake Day...or two
Comments (29)Michelle, The recipe from Bruce Aidell's is called "Italian Sweet Fennel Sausage". The wine you choose does make a difference. I used a Bogle Zinfandel and it made for a very tasty fragrant sausage, especially with the fennel. 3 lbs. pork butt 3/4 lb pork fat back 1/2 cup dry red wine 4 garlic cloves minced 2 T fennel seeds 1 T freshly ground black pepper 4 tsp kosher salt 1 tsp dried oregano 1/8 tsp ground allspice Casings (optional) Bruce's directions: Grind pork and fat, then mix in all ingredients with your hands. Shape or stuff into casings. 3 days in fridge or 2 months in freezer. My notes: I did a double batch. First I make large cubes of the pork butt and then toss with all the ingredients. I then refrigerate everything including my kitchenaid grinder attachment until very cold. Then I grind (spices and all) using the smaller dye. I then use the paddle attachment to mix it for a minute or two. Then I weigh into 3/4 lb. freezer packs ( best for my family ). Once in a while, we'll also stuff them. Freeze and use. Today I made two 13x9 pans of lasagne using 2 packs of my sausage. We'll freeze those for weeknight dinners. I love to make sausage! I still have a few bags of "Iowa Farm" breakfast and a couple of "Tuscan" in which he uses some smoked bacon. I'll check out your thread from Harvest. I need to make some spicy hot Italian. Not too hot as my family doesn't like it "too" hot, but for me, I love it. I have a friend who always brought "salsiccia" from her parents secret recipe. To die for sausage. What I wouldn't give for that recipe....See MoreHealthy Bread in 5 Minutes a Day
Comments (27)I used to eat toast or English muffins, french toast (still whole wheat) a bagel, that sort of thing for breakfast. I don't eat that anymore. The healthy bread is for when I want a carb but I cut the bread in half and after baking freeze it. I'm not inhaling it the way I used to and it's primarily for weekend breakfasts. I haven't bought a ciabatta loaf or baguette in nearly a year. We stopped eating most pasta, rice, potatoes, pretzels, popcorn and other carbs mindlessly. I still eat some carbs every day but I do think about it and have to really want it. I had a slice of spinach, meatless pizza from Whole Foods today but only one slice not two and I don't get any of those tempting desserts (a gelato cup) to go with it. If my weight creeps up, I skip or heavily cut back on the carbs. For every carb I skip, I eat some natural, toasted nuts. I buy raw cashews and almonds and toast them myself. I also eat more lean meat: smoked oysters, grilled chicken breast, non fried fish, sirloin, pot roast, etc. No rotisserie chicken anymore- I loved the skin too much. I stopped baking sweets. No more brownies, cakes, scones and pies around all the time. I used to bake because it was just fun. I still make something for special occasions, but that is what it is, a special occasion. No ice cream in the house all the time or cake squares in the freezer. No constant availability of homemade brownies. I do keep my favorite dark chocolate around for when I want some. I still eat some cheese but not as much. I eat a lot of Greek yogurt and spend more money on the vegetables I could eat all the time: asparagus and fresh wilted spinach. I rarely eat fruit. I rarely eat sandwiches and stopped getting fast food a couple times a week. I'm 161 right now at 6' and right in the middle of the bmi. I would like to be 140 ultimately but then I will have to buy all new clothes again. Probably a whole lot more than you want to know, but I am so happy to have lost weight!!...See More'Francee' - two days - what a difference rain makes!
Comments (9)Barb, I am afraid to look! A very late night... Be right back...coffeeeeeee, lol Went outside - brrr... no sign of frost or snow but a bit of slush is trying to descend from the heavens but I think it just gave up. Going down to 0 tonight...leaving sheets/canvas in place for the day since Social commitment won't afford me time tonight to re-cover. West side of house uncovered, half of east side uncovered also, under deck there are unfurled hostas - also no protection, right side of landing as well, unfurled hostas in front island bed are on their own too. :( The tallest unfurling hostas have cover only. Ran out of pots as most big ones went to daughter when we dug up her hostas in prep for a move. Barb, your DH just won the "devoted man of the day" award! Love that gesture - speaks volumes - lucky you! :-)....See More- 8 years ago
