I would stay away from Uline also. I have 2 clients who have a fridge behind their bars and Uline undercounter ice makers in their kitchens. They have well water with high sulphur content and they were unable to use ice makers in their bar fridge as they are unable to drink the water from the house water line. The undercounter ice makers roll out on wheels and hold a 5 gallon jug of bottled water. They fill it and roll it back under the counter. They are always having them repaired. If it's not the ice maker its the bar fridge. They have the repairman there at least 3 to 4 times a year and this has been going on for the last 11 years. I was there the day these units were installed and they have had trouble since the first week. This is a situation where the parents live in one house and the son lives next door. The repair service has been coming for so many years they have a deal worked out that they only pay for one service call and the son just pays parts and labor as the repairman has only to walk 400 feet to the son's house. This is how I ended up with the GE.

We have a 30' class A RV. With your space constrictions (we used to tent camp with everything in totes and coolers), I would say 1 skillet, 1 sauce pan, and a dutch oven with a lid. Lids for them all if possible. 1 flipper, 1 spatula/scraper, 1 slotted spoon, 1 solid bowl spoon. Collapsable bowls and collander. Pot holders/mits. Matches. Salt, pepper, paprika, italian seasoning, chili powder, what ever seasonings you would usually use at home. Tones makes tiny containers with a large selection of spices/seasonings for around $1, that are about the size of Annie's film cans. Portable gas grill. Dish soap, dish towels, paper towels. A friend gave me the idea of using a paper towel holder bungie corded to the awning post to have them handy outside when cooking/eating. Table ware can be stored in small plastic totes. Dish pan. That tiny sink will be a pain in the you know what to do dishes in, so take a dish pan and do them outside when possible. As to packaged food. Check the book sites for a book called Make-A-Mix. There is a volume two, I think. I have the first one. That is my where my sloppy joe recipe came from. Tastes pretty much like manwich. I leave out the green peppers and garlic, but I don't like green peppers and am allergic to the garlic. Still really good. I thing Grainlady mentioned the make a mix books in another thread. Many good recipes for mixes in there. You can use very small plastic zip bags that I find in the jewelry dept of the craft stores to store the seasoning mixes like the sloppy joe mixes in, writing the date made and any needed instructions in marker on the bag. Store a bunch of the small bags in a larger one. Tea bags, coffee, hot chocolate mixes (can find one in the make a mix book, but I have a better one. If you want it, I'll look it up and post it). A camp coffee pot works for boiling water for tea, hot chocolate, coffee, and heating water for dishes. The camp percolater, figure out how many cups it makes, add the amt of coffee you like for that amount of water, and after it starts to perk, time it for 8 minutes. If you want it stronger, go 9, no more than 10 minutes or it gets bitter. And it takes up less space than a counter top coffee maker. We use more paper plates and plastic silver ware than use regular, but your choice. Cereal bowls. Sugar, flour, cornmeal, all in small amts, in airtight containers. If it's airtight, you can leave it there all season, same with the spices. I don't even take the jars of flour and stuff like that out in the winter. Instant rice. dcarch, we have the E2000 generator, and it weighs lots more than the one you have listed. It is very quiet, tho. It would store great on the grate in the hitch, too! You don't have room to store all that stuff....cut veggies and fruits etc. Can you possibly order out the mac and cheese? You're going to make yourself crazy! Plan out your plan of attack....when you will make what and where you will store it. Then who will buy what and where you will store that....and how you will thaw and re-heat what needs to be reheated. Realize that it will take a LOOONG time to thaw a gallon of pulled pork or shredded turkey....and to be safe it should be defrosted in the refrigerator...or a picnic cooler and the temperature carefully monitored so it stays cool until it's ready to be heated. You don't want to give people food poisioning. Hard liquor won't melt any kind of plastic....it's not a solvent for anything like that. And take advantage of all the neighbor's refrigerator and oven space that you can....and don't over look the grill to heat things...or keep them warm....and use all the picnic coolers you can find. Yes...have a few stories...like the time I invited 2 people who used to be married, with their present spouses....figured out it was fine....but one man's new wife had a fit and spent 3 hours cowering by the front door lest she run into her husband's ex wife! And there was the sweet young thing who went upstairs and went to bed in my teenaged daughter's bed....and when daughter came home, we had to wake her so my daughter could go to bed, and the time that our pastor and his wife who invited to our new years Eve party, came after another party at 4 AM....because there were lights on and they knew we were up. And the time the dog drank the drippings from the keg and got so drunk she almost couldn't get up the steps into the house, or the time I bought cheap plastic watering cans to fill with flowers for table decorations....and a couple of them leaked...luckily that was an outside party....and the wedding shower where the groom had to be helped out the door. And the time I decided I could make pizza for 45 kids and had crusts and pepperoni and a vat of sauce....and grated 10 pounds of cheese by hand!!..Took me 3 days to clean the oven after that!

I am happy with it. And I think that I do see it keeping food fresh a bit longer now. Be prepared for less depth, but that's not a huge problem for us. We have a small full depth fridge in the basement if we really need to fit that huge pan or pizza box. Makes lots of good tasting ice. Freezer storage is adequate, but I do use the freezer in the secondary fridge, too and so it's perfect for us. It feels really well made especially compared to some of the new fridges my friends and family have recently purchased. If you can feel enjoyment when using an appliance, I think I do with this one lol. All in all I'd buy it again. Good luck.
