What finish for a built-in office desk?

We're having a built-in desk installed in our office with white drawers/legs and Espresso stained Red Oak desktop (see in progress pic and Houzz inspiration pic below). We're using oil based polyurethane as the varnish for top durability and depth of finish.


I want a finish that is luxurious/pretty on the dark wood stain and resistant to stains/smudges/scratches and easy to clean. I don't want it to be dull (fear with Satin) but I don't want it to be a mirrored glare effect (fear with semi-gloss). I'm not sure what the norm is for office desks. I've also read of people doing a coat of semi-gloss and then satin to get the best of both worlds for floors.


What finish is best for an office desk that will be used 5 days a week...that will be pretty/well designed/elegant but also best for function??
