Liquid ingredient baking question

last modified: 8 years ago

A few weeks ago, I made Pamela's GF pumpkin muffin mix. I had to mix together butter, milk and eggs together. I used almond milk (it said you can use DF milk) and mixed it with the butter, and all of it curdled into a lumpy gross soup. Thankfully I didn't add the eggs yet. So I discarded it because there was almost no liquid left. It was all curdled.

Then, a few days ago I tried it AGAIN, but with regular milk. It still curdled. I strained it and could salvage most of it.

Do any of you know why butter and milk curdle together? Normally this doesn't happen to me..
