It depends on what is important - fit and finished look vs a solution that would last for ~ 2 - 5 years. If it is the latter plug in t4 fluorescent would work. On the other hand, if the kitchen is in relatively good shape and you want the UCL to add value, it would be worth the expense to get a good UCL and have it properly installed. The better hard wired led UCL lights come from Philips (eW Profile), maxlite, ... which are not available from either HD or Lowes. The DIY UCL thread and continuation have more details.

Haven't used those, been through a few over the years though. Nowadays I mostly use Hafele strips which come in two color temps and are dimmable directly to the lights using a touch switch under the cabinet BUT with the number of dimmers you want you would need as many drivers with those. The switches connect back to the driver. You can run multiple switches to a driver but not multiple dimmers. Before those I used The Lighting Division-narrow shallow bars to size. The drivers are almost the same size as Hafele, prices are pretty good- they come in two color temps and 3 light levels. I mostly used the middle for UC lights but occasionally the higher light level. The advantage in you case is that they have an inexpensive undercabinet dimmer that is in line with the lights. You could then run multiple leads from the driver and put a switch in line so you don't need as many drivers. Comparing lights: check Lumens per foot and fall off as well as color temp. Take color temp with a grain of salt, also check the CRI "color rendering index" There is more to what happens to color than whatever a mfg "claims" for color temp. NOTE that dimming LEDs tends to make the light warmer. I'm going to test and see if I can run those dimmers with the Hafele (but won't get to it till next week at best) The advantage is it is easier to run multiple light runs to the Hafele, the drivers are set up for 6 inputs and can be joined for more power.

We just had our kitchen remodeled. Our electrician was recommending top-name brands such as Kichler, but we almost fainted when we went shopping for them. We did some checking around and found a nice undercounter LED in 2 sizes - in stock were 18" and 27" - and there's a 10" available for special order. The brand is UTILITECH, made for Lowe's, but checking the back of the box they're distributed by Kichler! We've had them installed for about 4 weeks now and I find that they're my most often used lighting in the kitchen. I have pendants over the island, hi-hats and over the sink halogens - but over and over again I turn on these undercab lights. We love the look and they were inexpensive enough so if and when the technology changes, and we decide to change, we won't have spent a small fortune as the Kichler systems were going to be. Helene

You can switch out the fixtures fine down the road, especially if you get LED strip lights that don't require separate transformers. Mags, maybe that's what you are thinking about. Lowes carries a nice product: Utilitech LED Under-cabinet Light Bar that you can plug-in (and hardwire if you like) with no separate transformer that you need to tuck away for the install.
