Comments (11)Each day of the week has a theme that I follow, and Monday is "Big Meal". That means a large cut of meat so there are leftovers for lunches/sandwiches/stir-fry, and possibly enough for the freezer, and possibly the base for soup. Last night was ham, fresh pole beans from the garden in "Spicy Asian Green Beans". Also from the garden - Potatoes O'Brian (with onions & peppers), a gluten-free banana muffin (from the freezer), and for dessert - I made a 3-minute Microwave Apple Crisp with a Jonathan apple, some raisins, palm sugar, apple pie spice, and a dab of butter. Served with a little whipping cream and homemade granola on the top - which is a Q&E substitute for Apple Pie and Ice Cream at our house (I hate to make pies so I fake them when possible ;-)....See MoreWhat's for supper.....Monday?
Comments (21)I know it is Tuesday but I am so excited about the Chicken Tortilla soup in the Crock Pot right now. Will deep fry some flour tortillas and have avocado and sour cream on top. Added black beans, corn and black olives. Have lime flavored rice, hominy and quinoa so everyone can choose what they want to eat it over or if they just want it as is. Comments (15)Last nights supper was the same as the night before and the night before that..Daughter brought over a turkey dinner complete with stuffing, gravy, taters, vegetable and pumpkin pie on Saturday. There is still enough for today's lunch in the fridge. I have been totally wiped out for a month trying to take up the slack since DH's knee surgery., so it was really appreciated....and delicious....See MoreSupper Time on Monday
Comments (21)I made two skillet tamale pies--masa cornbread layer (with corn and diced chilies), with layers of diced tomatoes, black beans, ground beef, and cheese. I put sliced jalapenos on top of one of the pies, for my kids who like the heat. We had them with extra tomato sauce and sour cream. My grandson said it was awesome!...See More- 8 years ago
