Would honed/matte finish countertop suck the light out of dark room?

Which is the better way to go with a countertop in a dark kitchen that doesn't have much natural light. We have good lighting w/ under cabinet lighting, upper cabinets, pendants, and recessed. I don't like to use the recessed lights much because they bother my eyes. Everything is on dimmers. Would a glossy quartz be better than matte in this case, even though we feel like the matte quartz adds a softness and texture to the space, which we like? How do you add that texture to the glossy counter, other than with wood boards, etc. The reflection of the glossy makes it seem "dressier", and warmer because of the glow from the lights above. I just don't care to have the lights shining in my eyes while cooking. What makes most sense?
