Finish Installing Hickory Flooring During The Winter

I have a question I'm hoping someone can offer some insight into. My wife and I are having a new house built in southeast Massachusetts. We selected 4" hickory wood with character throughout the house. The wood was brought into the house in late September and installed in mid-to-late October, so it seems to have had plenty of time to acclimate. For multiple reasons on the general contractor's part, the finishing of the floor (light stain and then poly) kept getting delayed. We have had a very mild fall. About 2 weeks ago, the weather turned very quickly and we have seen temperatures drop consistently to a high of the mid 20's to low-30's and at night into single digits. Unfortunately, the flooring specialist showed up a few days ago to complete the finish work and saw gaps in the flooring and said that he couldn't do the finish work because the poly that would go into those gaps would then expand too much in the summer and possibly do damage to the floor. I understand that the swelling and contracting are normal parts of having wood floor and that hickory may swell and contract more than some others. We have brought in 2, whole-house humidifiers to try and bring up the humidity in the house. It seems like it's working, however the relative humidity isn't moving much due to the temperature and the gaps in the wood floor remain. In your experience, is there a way to bring the humidity level up further to stabilize the floor or are we simply going to have to wait until the temperature warms up a bit to finish the floors?
