Here's a view of the intersection of my center hall (medium-stained oak), family room (dark-stained maple) and breakfast area (light porcelain). The other side of the breakfast area has yet a fourth flooring material (cork). A lot of people like the continuity that a single flooring material provides, and I definitely appreciate that. I prefer cozier, more distinct spaces, and like the differentiation that the flooring types provide.

Is there any reason why you can't just paint the Formica on the cabinet sidewall rather than remove it? (Scuff w/ sandpaper then prime.) Otherwise, try heat. Warm up the laminate with an old iron, blow dryer or heat gun. Start at an edge & work you way, warming & prying with a putty knife, drywall knife... The glue residue is not going to be fun. I don't know what will work on that aside from knowing that lacquer thinner will loosen the old, original solvent based contact cement. But definitely not advisable working indoors with it. I'd head off to Sherwin Williams & ask them about safer alternatives. (If the contact cement is green, you have a water-based cement.) Similarly, perhaps you can install 1/4'' Hardibacker over the laminate on the rest of the backsplash? Otherwise, you don't really need cement board for most of the splash. Drywall is a suitable substrate for tile. Only exception would be around/ behind the sink. Cement board would be a better choice for the wet areas.

Use ammonia and open a window....it's the least toxic thing you can safely use. The fumes from household ammonia are really pretty harmless.

Some people have luck painting all surfaces (walls and ceilings) with something like Kilz that seals the walls before painting. I would check with a wood floor specialist to see if you can use a sealer on the floor for now that would be easy to sand off when you're ready to refinish them in the future, if you can't to it now. Don't forget the doors and all the trim in the room. They will need to be sealed, too. You have to get all the smoke smell removed before you install carpeting or it will just absorb the odor, too. Laminate is non porous so shouldn't hold the smell - thorough washing should remove anything lingering on the top of it. I can't offer you much hope...I bought a used truck 17 years ago. Didn't smell smoke in it until the thorough cleaning the dealer gave it wore off and I could smell smoke. After all this time and numerous detailings, when the truck sits in the hot sun, I can still get a whiff of old smoke :(
