Comments (11)I'm going to make these for CHristmas Eve: Key Lime Mini-Tarts 1 cn (14oz) sweetened condensed milk 1/2 c key lime juice (I've used lemon or regular lime as well.) 1 container (8oz) Frozen whipped topping, thawed 4 packages frozen mini fillo dough shells Raspberries, if desired 1. Bear milk and lime juice in a large bowl on medium speed until smooth and thickened. Fold in whipped topping. 2. Spoon heaping teaspoonful lime mixture into each fillo shell. Cover and refrigerate tarts at least 1 hour or until set but not longer than 24 hours. Garnish with raspberries. 60 Tarts I made this Rum Cake from Southern Living yesterday for a Christmas Party, not one crumb left: Rum Cake: 1 1/2 cups butter, softened 1 1/2 cups granulated sugar 3 large eggs 1 egg yolk 2 teaspoons vanilla extract 2 tablespoons grated lemon rind 1/2 cup dark rum 1/4 cup banana liqueur* 3 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon baking soda 1/8 teaspoon salt 1 cup whipping cream Rum Syrup Powdered sugar Beat butter and granulated sugar at medium speed with an electric mixer until light and fluffy. Add eggs, egg yolk, and vanilla, beating until blended. Add lemon rind, beating until blended. Gradually add rum and banana liqueur, beating until blended. (Batter will look curdled.) Stir together flour and next 3 ingredients; add to batter alternately with whipping cream, beginning and ending with flour mixture. Beat batter at low speed just until blended after each addition. Pour batter into a greased and floured 10-inch Bundt pan. Bake at 350° for 55 to 60 minutes or until a long wooden pick inserted in center of cake comes out clean. Cool in pan on a wire rack 15 minutes. Pierce cake multiple times using a metal or wooden skewer. Pour Rum Syrup evenly over cake. Let stand 45 minutes. Remove from pan; cool completely on a wire rack. Sprinkle evenly with powdered sugar before serving. *1/4 cup dark rum may be substituted. Rum Syrup: 10 tablespoon butter 3/4 cup sugar 1/4 cup dark rum 1/4 cup banana liqueur* Melt butter in a 2-quart saucepan over medium-high heat; stir in remaining ingredients. Bring to a boil, stirring often; reduce heat to medium, and cook, stirring often, 8 to 10 minutes or until slightly thickened. Comments (26)Well, the pie turned out great. I sliced the apples very thinly since that's how I like them and got positive comments about that. The pie wasn't beautiful but it tasted delicious. Thanks again for all the ideas. I will probably play around with the all shortening pie crust for the future. I was in a bit of a hurry when I made the pie so I might have mismeasured. BTW we played poker, six of us, and only two had ever played before. We played Texas Hold 'em mostly but then I wanted to shake things up a bit and taught them five card draw and seven card stud. We had a blast! We were very girly about it, any real poker player would've been tearing his/her hair out! I get distracted by her accent when watching her program and often end up missing some of the action, LOL. amck, my dd discovered a Buttermilk Brownie Cake recipe about a year ago, and now all the guys in our family want it on their birthdays. It is very moist, utterly delicious. Here's the recipe, in case you are interested: BUTTERMILK BROWNIE CAKE Cake ingredients: 2 c. sugar 2 c. all-purpose flour (dd gets better results w/bread flour) 1/4 c. unsweetened baking cocoa 1 c. water 1/2 c. oil 1/2 c. butter (1 stick) 1/2 c. buttermilk 1 tsp. baking soda 2 eggs, beaten 1 tsp. vanilla extract Directions: 1. Preheat oven to 400 F. Grease (we use cooking spray) a 15" x 10" pan. (Dd uses a 9" x 13" glass dish, no problem.) 2. Stir sugar, flour, and cocoa together in a large bowl. 3. In a 2-qt. saucepan, bring water, oil, and butter to a boil. Add to flour mixture and mix well. 4. Add buttermilk, baking soda, beaten eggs, and vanilla, stirring well after each addition. Beat well and pour into prepared pan or dish. 5. Bake 20-22 minutes, until toothpick inserted in center comes out clean. Cool completely, in pan, on wire rack. Frosting Ingredients: 1/2 c. butter (1 stick) 1/4 c. unsweetened baking cocoa 1/3 c. buttermilk 4 c. powdered sugar 1 tsp. vanilla Directions: Combine butter, cocoa, and buttermilk in a 3-qt. saucepan with a whisk; and bring to boil. Remove from heat. Beat in powdered sugar and vanilla extract with mixer at low speed. Spread over cake. This is very easy to transport because it stays in its baking dish. Comments (58)I had forgotten all about tomato gravy! I am not a gravy fan at the best of times though. Beaten biscuit is supposed to be a southern favorite and though I have lived in just about every southern state I never ran into it. traditionally beaten for over an hour and people were supposed to have a stump in the yard where they beat the dough with an ax handle or some such thing until the dough blistered with air. With the internet I at least know what it is supposed to look like. Somehow using a food processor is supposed to speed up the process so you only beat for ten or fifteen minutes.
