I cooked a big package of boneless skinless chicken breast in the pressure cooker. Then I shredded one, adding it to the broth, added ingredients for Minestrone soup and turned the pressure cooker back on to soup. So good fresh Minestrone soup for dinner with some cheese bread.

I have been canning sweet potatoes all day and I'm tired. Still have one more canner load after this one. So I saved out one nice tater, I'm going to nuke it, add a tablespoon of real maple syrup and some butter, and maybe a little salad alongside.

Italian shepherds pie.

BBQ NY strip, seared yellow squash with fresh garlic and salad. Probably will warm some sour dough bread for hubby.

Going to make shrimp Creole with rice

Lamb stew, garlic bread, salad of mixed greens with apples, gorgonzola, and balsamic.

Paw Paw Patch for their yummy chicken fried steak with white gravy, green beans, mac 'n cheese, Mexican cornbread. My plate was clean when I finished. Sooooo good!

Fried chicken, baked potato, cranberries.

Leftovers - TJ's chicken in red coconut curry sauce over rice. And probably some salad.

I made the warm salad someone suggested in my thread. It was very good and a wonderful change.

Home made vegetable beef soup

Hot/sour soup, Moo Goo Gai Pan over rice, broccoli with toasted almonds. Dessert will be peaches with yogurt a little later.

Homemade pizza, a favorite Friday night meal with our next door neighbors. We like to put the pizza stone on the grill and cook it outside.

We had salmon with a mixed green salad with grapes, cashews, shaved manchego and a light dressing on special request by DH.

Leftovers,baked mac & cheese,metloaf and some kind of green veggie.

Stuffed quahogs (large littleneck clams) that we froze after my husband went shellfishing a few months ago. They take a long time to make but oh, so good. With broccoli slaw.

I was going to make apple sauce pork chops in my Instant Pot but didn't have some of the ingredients so I am going to cook a strip loin steak that is still frozen (my preferred method of cooking steak) rice and steamed broccoli.

Husband is having leftover pork stew. I am having a beer. It's been a long week. LOL

I had a late lunch of tomato soup and half a vegetable sandwich at Panera's while out shopping with daughter. Supper for me was a banana spread with peanut butter and miracle whip, while DH had vegetable soup from the freezer and a pepperoni roll. Hopefully we will eat more healthy tomorrow.

We had a pasta dish with bowtie pasta, chicken, spinach, and alfredo sauce. Also some cheese toast. Split a piece of cake.

A catered end-of-the-semester dinner for a class my wife taught. The meal had poached salmon, chicken, broccoli tortellini alfredo, mashed potatoes with goat cheese, sauteed vegetables with squash and tomatoes, followed by cheesecake. I had too much.

The meal was in the dome room of the UVa Rotunda.

I made homemade pizzas. Mine had pepperoni,red bell peppers,green onion and green olives. SOs had pepperoni,Italian sausage, breakfast sausage, bacon,ham,bell pepper and green onion. We get 2 or 3 meals out of those, as I'm not stingy with the toppings. :)

Spaghetti, and homemade meatballs from yesterday. I really love the meatball recipe, but it takes many hours of prep (which I usually try to do the day before) for a large batch. Then my basil plant could not provide sufficient foliage for the 3/4 C of minced fresh basil, and a trip to TJ added to the time. Luckily, I still had frozen sauce, so that part was simple. The garlic bread task was delegated out to a family member.
