Comments (2)Are you fully cooking the turkey by smoking? If so, treat it like any cooked meat. We smoke/roast a big turkey every Thanksgiving. We eat some of it over a day or two, the rest is frozen. I prefer to break down the whole carcass as soon as it's done so I can put it into the stock pot. The big joints are cut off the bones which also go into stock. This is to minimize the space it takes in the freezer. We keep some of the meat in the fridge to be eaten but everything else is in the freezer within hours of taking the turkey out of the oven. Comments (11)I am making two 9 lb breasts this year. I have them thawing now and will brine them just over night so I'll need them completely thawed by Wed. I have a cell phone pic of my ahem breasts if anyone wants to see LOL!!! No seriously I am taking lots of pics this year to make a scrapbook to pass along to DD. Shhhh!!! Its a secret. Comments (5)I've done it on my gas BBQ rotisserie. It took about the same amount of time as without a rotisserie. An instant read thermometer is particularly useful with this since you can't have a corded probe in. Does your oven manual give a weight limit? I have the Miele oven with rotisserie but I don't think it is meant to handle an 18 pound turkey - it's more for chickens. Balancing birds on the rod is the hard part - since they have a hallow center, I find it difficult to get them positioned to stay balanced. Also, it helps to tighten the screws on the rotisserie forks with pliers. The way the alliums float over the garden is just lovely - especially with the little bunny , it looks like a fairy tale. Ckerr, that little table and chair look like the perfect place to relax!
