Comments (28)Another fun topic. Well, until recently we did meatless main dishes a couple nights a week and the rest of the nights could be most anything like pasta, stir-fry, roasts, casseroles, tacos, pizza, typical meat/potatoes dishes, yada yada. We had been working on having more meatless meals and adding more fresh veggies but weren't fanatical about it. A recent health scare in the family has made me a fanatic so we are in flux on our meals and I feel like I'm learning to cook again from scratch as we move more fully into meatless, plant-based, whole-foods, low-fat cooking. I'm not claiming or striving to be 100% vegan. We still eat seafood. Our freezer is too full of the yumminess of salmon, halibut, clams, cod, crab, shrimp and tuna. So we're limiting seafood to 2-3 meals per week, and eliminating dairy (except a half butter/half grapeseed oil spread that we use sparingly). I feel like I'm learning to cook again. I have always made a lot of soups so now I'm just doing them without meat and using beans/lentils/dried peas instead. This means I'm playing with different seasoning blends and flavor profiles. I'm also experimenting with different bean-based fillings for things like tacos/burritos/wraps and faux-burgers/loafs. I've never been much for buying processed foods so I'm avoiding the store-bought faux-meat items and learning to make healthier versions of things like that myself. And I'm not trying to get them to taste like meat. Just as a well flavored, non-meat protein. I really don't miss meat. Wasn't that much of a fan of it anway. DH is having more of a problem with the adjustment but he's the one that needs it most so I just keep trying to find things that satisfy him. I was making a lot of our own bread before so now just bake more to eliminate store-bought and have been experimenting with how much I can add in the way of things like ground up nuts, seeds, steel-cut oats, bulgur, etc., to increase the nutritional value of the bread while still getting a nice bread for sandwiches or toasting. So my baking center isn't getting as much use as it was before for sweets but it's sure handy for getting the bread done! Breakfast is always a green smoothie, packed with greens and superfoods. DH usually also has some steel-cut oats, bulgur, muesli with nut milk, or similar to fill him up but the smoothie satisfies me until lunch. Lunch and dinner are kinda interchangeable and can be salad, soup, stir-fry, sandwich/wrap, taco/burrito, "meat" loaf, seafood dish, veggie pastas with veggie sauces (thank goodness for my spiralizer), veggie chips, hummus, etc., always with some kind of veggies whether the salad and/or a side as well. Desserts tend to be sorbets made with 100% fruit/berries but I'm ready to branch out. I made my first black-bean brownies a week ago. Pretty good but I think Laughable's suggestion for the non-baked ones sounds even better. Will try that next. I'm trying out a lot of different types of vegetables that I've never bought before. I've had to laugh at myself when I've gotten home with something I can't identify. Seriously. I need to take photos of the sign at the store to help me remember. Menus vary depending on what veggies I have on hand, what looks like it's starting to turn and needs eaten NOW, and such. I read recipes online like crazy for ideas but I rarely have all the exact same ingredients so I do a lot of substituting and experimenting to see what works and what doesn't. I don't think I've ever made anything the same way twice but I'm having fun with it Fearless in the kitchen, that's me, lol. Side benefits. I just plain feel better eating this way. I used to have a lot of heartburn and other gastro-intestinal problems. Gone. Nada! No odd headaches out of the blue either. I've always been one that has to practically starve myself to lose weight. Yup, even when I'm training for long bike rides and alpine scrambling. And now all my clothes are getting loose without me starving myself or even being hungry at all. I'm quite satiated. And I don't have any cravings for sweets which is crazy because I have always had the ultimate sweet tooth. Go figure. Love the side benefit of losing weight without even trying. Comments (48)I have quad outlets everywhere. I did them anywhere I d@mn well pleased in the kitchen, too. I can't tell you how many people said I didn't need them. Until I reminded them that electrical needs of the 30s and 40s changed dramatically in the 80s and 90s. Imagine what they'll be in the next 50 years. Just the list that looklakelaborcamp listed isn't even the beginning, if you really think about it. How many chargers? How many battery operated tools and cleaning implements do we have these days? OT: I had my windows and sliders on the front of the house taken out. I think I'm going to brick the front (after much research here on GW/Houzz) but first things first. I'm replacing my horrendous windows and sliders with Anderson casement windows and two sets of beautiful, 2" thick antique doors where the sliders were. Those sliders just plain sucked, as did the windows. Talk about leaky... My house looks like it's foreclosed upon, all boarded up. Doesn't help that my lawn was up to my waist. Who needs to buy grass seed? Just grow your own. I'm sure, though, that the scummy neighbors figure it's now mowed because it's going up for sale. I'm kind of afraid to leave! CL: 7 new windows $500. 4, exterior, antique doors $200. Labor: to take out? Free. To put back in? $100 a day and they will be PERFECT. Comments (20)i think some good ideas have been posted here for future threads. yrs ago after reading here for a few yrs I decided NOT to redo my kitchen because I didn't have the strength, energy or decision making capabilities to do so - from what I read here. I didn't want to go thru the things you all do - lol! I don't cook much anymore and I'm not in the kitchen all that much. the insides of the cabs are good, the outside is just tacky - and I only have 6 drawers (not very wide either). But I've muddled thru ok for yrs. I have planned to have 3 or 4 drawers put into 1 lower cab that's 24" wide. haven't gotten to that yet tho. I do need a new faucet and have a new/used sink to be put in... but then I think of the blah/old counter top I have and figure I should replace it at the same time. BUT, I think my first spring here I had ants attack the kitchen. they were so very, very tiny, if my counter hadn't been plain white I doubt I'd have even seen them. that made me rethink the patterned counters I'd decided on... it took me over a yr to convince myself to go for color and pattern rather than plain white or beige. and I tossed out the whole idea because of ants... that was 3 or 4 yrs ago. now I'm thinking about it again... the same with my mstr bath. it has a 5' vanity but the sink isn't aligned with the lights over it... and the under sink cabinet is very misaligned. the right door of it is under the sink and the left door of it is under the counter to the left of the sink... yikes! I could use more drawers in there too and I have the space for them. I have 3 maybe 10-12" wide drawers. and again in there, it started with the faucet not working right. it's very old and ugly. the sink is bad too so that should be replaced... so while I'm at it I should replace the cabinet... and while the cabinet's out I should replace the flooring... see what a mess I'm in? lol! I didn't even mention the light fixture and mirror need to go... I'm not sure I'd live thru the bath or kit redo. but 1 thing just leads to the next until it's way beyond what I think I can deal with. I do plan to talk to my handyman on his next trip here. bath 1st maybe... but what do people with patterned/colored counters do if they can't see the ants? isn't like these things are big enough to be easily seen (or like I have good eyesight or wear my glasses in the kit) or black or something (wearing a sign?). maybe I'm stuck with just plain beige. I think I could deal with it if it could be done in maybe a week... it's just me and I don't really have to cook and there's no kids but I don't think me would survive it! you all are so brave and gutsy! I know if any of you had a magic wand you'd share it with me - right? beachem, I hope your dad gets totally better. and sorry to hear about the slab - VG is one of my favorites, but I'd like a piece for wall art not counter! Comments (46)We've had 4 contractors...no GC. 1 plumber to move the gas line, but they didn't seem to care about building codes when they drilled though the ceiling joists and didn't listen very well when I told them where to put the gas for the range. The actual gas supply is where it needs to be but the shut off valve is *barely* not behind the adjacent cabinet. We did our own water supply. 2 drywall contractors, the first of which was recommended by neighbors and were HORRIBLE, the second were reasonably good where it counts but still haven't come back out to sand in corners near the floor so we can have straight baseboards. Good thing we're nowhere near ready for baseboards. And to be fair to them, we did have a hurricane get in the way of everything. The 4th is a very expensive electrician, who my dad has known for 20 years and does all his electric. They've been pretty good too but a lot of junction boxes are still set back to far for proper seating of covers, and we haven't even tiled the backsplash yet, which will make it even worse. Long story short, there are many out there who won't do the job you would do in your own home if you were able to. So now my regrets...we're not finished, so they haven't all come to light yet...I only have 1. I wish we had better quality cabinets. They're not terrible. They were already assembled RTA we bought off Craigslist and they saved us about $6000. The thing is, if we gotten the ones we were planning to buy (Shenandoah from Lowes) we would probably have run out of money by now. So there's that....See MoreCheryl Hewitt
