Will Li jujube become better as the tree matures more?

I planted a lone li jujube this last Spring as an experiment to see if I like the jujube fruit. The dang thing grew like crazy and produced a number of fruit. I thinned off all but 3. I tasted them at different periods. The first was when the fruit was turning from yellow to mottled brown. The second was at full brown, and the third was when the fruit was starting to wrinkle on the tree. Granted, this is less than a year in the ground but the fruit was dry and spongy. There was a sweetness there but it wasn't at all like a true date.

My question is if the fruit will get better as the tree matures more in the coming years. I'd like to try it out if so, however I ca also pull it now and plant something there like another mandarin or cherry that I will like even better.
