Where can I fit a combi steam oven (XL Miele?) in this layout? Help!

Comments (45)We had been waiting a long time for this oven to appear in Canada and we planned to install it in our new condo that is under construction. We had ordered it and obtained confirmation from Miele that it would operate at 208v. We have since found out that this oven has not been approved by the Canadian Standards Association (CSA) for use at 208v and consequently Miele are now not offering it for sale in Canada. Apparently it has been approved by the CSA to run at 240v but no one in Canada has this voltage available to them. Our condo builder told us it would cost about $2000 for extra wiring and a transformer and we would have to put up with a hum and a transformer mounted "in the open" for cooling requirements. He also told us he would not install a device if it was not CSA approved. If any Canadian reader has a different story on the power supply, we would like to know. Comments (8)First of, congratulations on your good deals for these three units. They will serve you well. For ventilation and wiring purpose, you will need a gap at the back of the shelf behind unit. For combi steam oven, this is where the oven sucks in the air in. It will vent warm air to the front underneath fascia. So following diagram #1 looks fine. For the sentence "The cabinet housing must not have a back panel fitted behind the installation niche", this must be from a newer manual of the combi steam oven. For example, see newer 6805 manual vs older 6805 manual. In a version that I have it uses "Make sure there is no back wall behind the building-in recess" which means that there should not be a cabinet back wall right at the cut out area. See picture for air intake in combi steam manual in installation section. In terms of installation each is 18" tall, just need to be arranged such that coffee machine is not too tall, and speed oven not too low. Perhaps somewhere where the bottom of the combi steam oven is a little bit below bench top level. A combi venting warm air at the front is not an issue for comfort. I have only combi steam oven in my kitchen and its bottom is at the bench top level which is very convenience, but that would put coffee machine a little too high up, if it is going to be on top. Comments (132)I find dual fuel to be mostly a marketing gimmick and not really relevant in practical use. I cook and bake in both gas and electric ovens, and it is easy to adjust for both. Gas is naturally drier, as the oven has to have a vent. But that can easily be compensated for by putting the food into an enclosed container (e.g. a Dutch oven). Electric ovens are naturally higher humidity, but not really enough to make a big difference. On the other hand, the CSO has very precise control for humidity over a very large range; and it also has very precise temperature control, which is great for things like sous-vide cooking, yeast proofing, yoghurt making, ... Also, the CSO has a stainless steel interior, so it doesn't suffer from the issues with flaking glass bits that lots of other electric ovens seem to experience, no matter the manufacturer. I personally love our combination of the best-in-class Bluestar gas range, and the best-in-class Miele CSO. Comments (10)I have been researching various Miele combinations for the CSO and the CO both 24 inches wide. I had designed an alcove in the kitchen 90 degrees from the island for stackable CO and then the CSO XL. Both are the Sensotronic because the CO 24 inches doesn't come in the M touch. The CSO is unplumbed because I was told that filling the water and emptying the condensation tray is really easy. I am now re-thinking these choices. I thought getting the CSO XL was nice for daily cooking along with the induction cookop (Miele 30 inch or 36 inch, still deciding). But in looking at the XXL, it seems I could just get the XXL M touch and plumbed. Any thoughts: Is having the CSO XXL enough. I hear it takes an 18-turkey. The only reason to get the CO is perhaps for making a pizza, but the CSO XXL also has an intensive heat option. This is for a new home construction. All the Miele literature shows these gorgeous kitchens with all these stackable appliances. But having a single XXL at the right height as a wall unit also seems elegant, especially the M touch.
