OH, you all need these cookies to put in your cute pumpkins!!! These are very yummy! I just add chocolate chips...DS doesn't like raisins in cookies. "Great Pumpkin Cookies" 2 Cups Flour 1 Cup oats (uncooked) 1 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon salt 1 cup butter or margarine ( I use one of each) 1 cup packed brown sugar 1 cup white sugar 1 egg (beaten) 1 teaspoon vanilla 1 cup pumpkin (cooked and mashed or canned) 1 cup chocolate chips or raisins Preheat oven to 350 degrees Combine first 5 ingredients Cream butter gradually add sugars, beat until light and fluffy. Add egg and vanilla, mix well alternate additions of dry ingredients and pumpkin. Mix well after each addition. Stir in chips/raisins Drop on lightly greased cookie sheet. Bake 20 - 25 minutes - yields 19-20 cookies

Bobby, your cookies look delicious! I'm going to try them soon, I'm in the mood for pumpkin things. And there is not one single thing wrong with your photo. It looks like real food prepared by a real person in a real home kitchen, for real people to eat. And that is really a lot more appetizing (and realistic) than the professional glossy magazine type of picture. That is not intended to put professional appearing photographs down. The pumpkin roll is now chilling! DH will taste test later. Since I had pumpkin left over, I made these pumpkin cookies. They are supposed to be iced, but I won't. Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside. In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly. Maybe if I spelled Oly's name right I could find it!! :) Well a little more sleuthing and here it is PUMPKIN BARS 4 eggs, beaten 1 (15oz) can pumpkin 1 1/3 cups sugar 1 cup vegetable oil 2 cups flour 2 tsp baking powder 1 tsp baking soda 1 tsp salt 2 tsp cinnamon 1/2 tsp ginger or nutmeg CREAM CHEESE FROSTING 8 oz cream cheese, at room temp 3 Tbsp unsalted butter at room temp 3/4 tsp pure vanilla extract 2 1/2 cups confectioners' sugar Preheat oven to 350. Beat together the eggs, pumpkin, sugar and oil until well blended. Sift together and add the flour, baking powder, baking soda, salt, cinnamon and the ginger or nutmeg. Mix until smooth, then spread the batter in an ungreased 10x15 inch baking pan (or for a fluffier version, a 9 x 13 inch pan) Bake for 25-35 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool. For the frosting, beat together the cream cheese, butter, and vanilla until light and fluffy. Add the confectioners' sugar one cup at a time, and beat until smooth.
