Roasting eggplant slices now to use in an eggplant gratin. Adapted version of an Ina Garten recipe. Side salad of mixed field greens and cherry tomatoes with Sensation dressing.

Meatloaf, mashed potatoes, gravy, broccoli spears and a garden salad.

Spaghetti and meatballs with garlic bread. If someone else would make a green salad, I'd eat one.

I've chosen to skip most meats on Mondays, not trying to be vegetarian by any stretch of the imagination. So tonight I had mac/cheese, a hard cooked egg, and a small amount of vegetable soup.

Chicken sausage, red, yellow, orange and green pepper and onions. We used to eat this with rice but DH decided he didn't want rice so I am happy to oblige. (I do not need the carbs)

Seagrass, I did a salad for lunch today. I bought sliced roast beef, a box of spring mix lettuce, cherry tomatoes, already cut up red cabbage and a cucumber. A;l I had to do was slice the cumber and wash a couple of tomatoes.

I do make more elaborate salads and so yes, I can be lazy too.

I just loaded up the aroma cooker with chicken breast and Spanish rice and onions and bell pepper and mushrooms, going to let it saute and simmer.

Baby back ribs, potato salad, corn on the cob, and salad. Now I'm eating a lemon filled donut!

Lunch was a grilled Bubba Burger and a fresh fruit salad.

Egg salad sandwich on white bread. With cold milk. I'm ready for bed, and it's only 7:34. Sigh

Diced chicken leftover from roasting a bird yesterday and made a chicken and noodle casserole glued together with left over gravy. Steamed broccoli with it.

Fried catfish with homemade tartar sauce.

Home-made pea soup with a roll and butter.

Had Mexican train here tonight. We played earlier than usual (6:00 pm.) so I had some pumpkin, butternut squash, sweet potato soup that i made on Saturday (not really for Mexican train, but just a recipe I wanted to try) I served that in demitasse cups, had pigs-in-a-blanket, queso dip, salsa and chips. That was dinner for tonight.

Mike had a real treat for the boys. Corn dogs and stoffers mac and cheese. LOL

Broiled teriyaki-ginger salmon, roasted summer squash, and a side of rice.
