Some Like It Hot

Yes indeed, some do. Not me, I'm a heat wuss, but my husband Elery loves hot and spicy food. This summer I grew jalapenos and serranos, as well as poblanos and sweet peppers. Elery says the jalapenos are as hot this year as the habaneros were that I grew last year. That's enough to scare me, so I'll take his word for it. The peppers are starting to ripen, so I picked these:

I also picked some green ones, but I didn't take a picture.

I promptly made some homemade Sriracha, something I've been meaning to try for a time now. I didn't can it, I only managed to make two 4 ounce jars, which went into the refrigerator.

Since I still had peppers, I decided to make the "Easy Hot Sauce" recipe from the National Center for Home Food Preservation. It's hot and to me it only tastes like vinegar and hot. I tasted it from the spoon, then promptly rinsed my mouth with a glass of milk, then rinsed it again. It's hot.

Green peppers were made into a kind of hot pepper/mustard "butter" that Elery likes. I can it, because Elery wants me to, but I can't vouch for the safety as it isn't an "approved" recipe. Clearly I'm confident enough in it to can it, as it has a quart of vinegar to 36 peppers, but it's not tested or guaranteed.

I still have peppers, so I'll make some "cowboy candy" and then roast the poblanos for freezing, then I can be done with hot peppers for another year. Meanwhile, I have more colorful jars on my shelf.
