I just did a search for his show and found the episode. Wow, does that ever look good!! What an intriguing method. I'm definitely wanting to try this the next time I make a pie.

I also learned about under-whipping egg whites. That too was a first for me.

I just saw that show too, but haven't tried the crust yet. The only recipe I've tried thus far from Milk Street is the hummus and I can tell you that it is good enough to give up canned beans and make it their way.
