Soon to be making tomato sauce, any insight into process
Comments (19)The food strainer I mentioned will not allow any seeds or skins into the sauce. The holes in the conical sieve are very small and they just push stems and cores out and any fibers through as pulp, but seeds and skins go out the end. I take all that 'waste', and run it through a second time to push out all the rest of the liquid, and even then it will not allow any skins or seeds through. These food strainers can also use a motor unit instead of the hand crank. They are designed with the same kind of motor a pasta rolling machine would use. The link below also shows two different dedicated electric models for tomatoes only. Serious enough for the 2000 pounds of tomatoes!! Big Boy, Better Boy, Early Girl are fine as eating toms, but tend to be more watery and less pulpy. I grew many roma and plum types and also like the oxheart which is really meaty, but has a flaw, that its not as tasty as a home grown plum tomatoes. I get tomato seeds from Tomato Growers and also Totally Tomatoes. They have sections just for the sauce or paste type tomatoes. One time I decided to make use of the skins and seeds, and put it all in a big powerful blender (Vitamix). It never broke down the seeds, but did good with the skins. I added some of the juice I extracted earlier and cooked it down to a thick paste. It was AWFUL!! Seeds and skins just don't make tomatoes taste good anymore, no matter what you do. I had made the mistake of not tasting that blended part and added it to a batch of sauce. Luckily it was just about 6 quarts and I had to toss it out, as it was the worst tasting mess I ever had. I even ruined a big stainless steel pot as it boiled dry and then warped the pot. I had fallen asleep while it was simmering.. Never do that again!! No bodies perfect.. Comments (13)Thanks for your thoughts, everyone. The reason I am hesitant to go the permanent route was it is so permanent. And if we don't like how it turned out, that's an expensive mistake. The reason I am hesitant on film is because I'm not sure how it holds up from a quality perspective. Oaktown: Wow, that's cool film. I wonder if it works? Very interesting. Virgil: We have tried pinging the architect on it. He hasn't responded to our emails. I wouldn't mind him being more engaged on the issue, but maybe he thinks it is too small an issue to get involved? I imagine if he did weigh in, he would say to just leave it all plain glass (no obscure). I will try to give him a call and ask about it. Comments (19)Can't see anything thru ours. And it is no louder to me than the old door. Here's the story of mine. I went to Lowe's, had it priced it was something along the lines of $350. So, then a lightbulb went off in my head. There is a lumber store nearby that is known for having tons of doors, great prices, lots that were returned by GC--perhaps they were cut wrong, etc. Great prices. I took my existing 6 panel wood door in with me, they hunted for one that was already cut to see if they could find one that matched...and voila. I got one! It cost me around $125. If it hadn't been cut they would have charged a very nominal fee to do the carpentry work for me by using my existing door as a template.
