Comments (16)I got this recipe many years ago from a long gone bulletin board. (Do you remember the old forerunners of the forums?) A quote from the submitter: âÂÂI wanted to send you this recipe, it's a special one from our family. We have had this every holiday for as long as I can remember. My Mother got this recipe back in the early 50's from a chef at the Montecito Country Club and we have always had it. It's funny but my cousins all make it too and I was so surprised to find that out. My Mother has served this dish every Christmas and Thanksgiving for over 50 years. It's just as popular today with family and friends as it was years ago.â Ione's Country Club Salad 1 Small Package Lemon Jell-O 1 1/4 Cup Boiling Water 1 Can Fruit Cocktail (Reserve the Juice) 2 - 3 oz. Packages Cream Cheese 1/2 Pint Whipping Cream (Whipped) 2 Bananas 1 Cup Miniature Marshmallows Add water and cocktail fruit juice to lemon gelatin. Refrigerate until it becomes the consistency of egg whites. Beat in softened cream cheese to pea size. Add fruit cocktail, marshmallows and sliced bananas and fold in whipped cream. Comments (13)BLACK BEANS Serves: 8 1 lb dry black beans 1/2 cup extra virgin olive oil 1 large Spanish onion, diced 4 cloves garlic, finely chopped 1 green bell pepper, seeded and cut in quarters or diced 1 tsp dried oregano 2 bay leaves salt to taste Wash beans well and remove any bad beans and debris. Place beans in glass bowl and cover with water and soak overnight. Wash and seed bell pepper and cut in quarters. (You can chop it if you prefer, if you donâÂÂt like to eat it, but do like the flavor it lends, pull the quarters out before eating.). Dice onion and garlic (I use a garlic press). Place the beans with the water in which they soaked in 6 Qt pressure cooker. Add extra water if needed to have 1" over beans. Add the rest of the ingredients. Cook on high pressure for 20 minutes. Cool cooker quickly and check consistency of beans. If not tender enough close cooker and do another 10 minutes and check again. If there is too much liquid, leave cover off and boil to reduce some of the liquid. There should be some liquid, but it should not be thin and soupy. Some family members like to add a tablespoon of sherry vinegar before serving. Beans can be successfully frozen for a long time. Some cooks prefer to make a sofrito in the pressure cooker first, with the olive oil, onion, garlic. pepper and oregano before adding the beans and the bay leaf. It turns out well done either way ��" do whatever you prefer. If you like, remove about half of soup from pot and puree with a blender, and then return to pressure cooker. Adjust seasoning as needed. Add water if needed for desired consistency. Black bean soup may be served over rice and garnished with your choice of lime juice, sour cream, avocado, chopped onions, grated cheese, parsley or cilantro, tortilla chips or cornbread. For Crockpot: Soak beans overnight in crockpot, add veggies to the crock or sauté the veggies, then add to the crock. Add oregano, bay leaves, and salt and pepper. Simmer, stirring occasionally, for 3 hours on high or 6 hours on low or until beans are tender but not mushy. For Stovetop: Soak beans overnight in saucepan. Add veggies to the saucepan or sauté the veggies first, then add to the pan. Add oregano, bay leaves, and salt and pepper. Simmer 2 to 2 1/2 hours until beans are tender but not mushy. Comments (51)Jennifer, I like the video. It reminds me of stories my mom, dad , and grandparents use to tell. Times must have really been hard for many years. I remember my dad telling the story of when he was very small, the Arkansas and Mississippi river flooding. The family was taken to what sound like a refuge camp, everyone lived in tents, he said disease was so bad that people were dying like flies. They worked along the Mississippi, or Arkansas river in the cotton fields, and never knew anything but hard work. Dad left home when he was 17. He worked his way to the west coast and back. He could not read or write, and the family did not know if he was alive or dead. He made it back home the day his family heard that he had been killed. He then started to work in the coal mines, when called for the war, he failed his physical, but he said that the miners were not allowed to quit the mines anyway, because the coal was needed for the war effort. Dad left the coal field around Paris AR., and came to the coal fields along the Arkansas, Oklahoma line, that was when he met mom. They knew one another 40+ days before they were married. Dad died of cancer about 15 years later. I don't think mom ever quit loving dad. Mom is buried next to dad, I had a stone made just like the one she picked out for dad, they sit side by side. I can remember mom telling about my grandmother, who was Chickasaw Indian, cooking meals out side, she used a very large rock to set the supplies on, and would build a camp fire by the rock. When I was young, up till I was married and had kids we would go on a large camping trip every summer and granny would do all the cooking. I wondered how she could cook so good on a camp fire, that was when mom told me that use to cook like that all the time. I am sorry, this has not been about gardening, but instead about memories that the video brought back to me. Jennifer, Madge and my neighbor are trying to get me to buy a new tractor. They tell me that I am getting too old to work on that junk, I don't see well and am not very strong, and my tractors range from 20 to 70 years old. He went searching this morning and came back with this, suggesting it may have been this little horn, not a bell. How funny! I think it will work fine. It's awfully noisy--I don't think he can possibly not hear it! Speaking of naps, I just had THE nicest nap! It was a doozy! I also should check up on nolo bait. Grasshoppers STINK. Sure it was your keyboard, Amy? I've been having problems with Facebook--commenting on others' posts. I suppose I should try to train Garry on the cell phone. It's certainly not something he'd like training on. . . on the other hand, he needs to train me on how to sit down and read a good magazine or book straight through. I so admire him for that. Recently I got hard copy subscriptions to Nat'l Geographic and Smithsonian. He devours both as soon as they come. I had also ordered The Afghanistan Papers a few weeks ago and by gosh, he has sat down and read through that entire thing, as well. I'm a little jealous. Suzanne came over last night about 7 and stayed until 9 or so. Wow--I never have company that stays so long. SO fun to catch up. We sat in the quilting/everything room so as not to bother Garry. She remarked on how different the energy vibes were in that room. Wow--that really resonated--I'm sure that's true--for sure it's nothing like the rest of the house. No way for me to ever get bored in there! I think I may embark on sorting seeds there--probably as close to gardening as I'll get in the next few weeks! Garry and I are encountering a behavioral issue with Tiny. I remember Dawn telling us to not forget who's in charge, re cats. Seems Tiny is taking us to school in that department. I suspect it comes from the fact that neither of us has been outside gardening this past month. I'm a little embarrassed even bringing it up. This is where it comes from: these 3 cats are much beloved by both of us. Though I know Danny was/is right, that cats need to be kept inside, that ship had sailed with these 3/barn door had been openined--impossible to get the "horses" back in. And so every morning we go through this rigamarole whereby cats have to go out, then in; then out; then in. Tom and Jerry, not so bad. But Tiny has discovered (created?) a new game. He can scratch on the front livingroom window screeb. Garry goes to the door to let him in. Works great. NOW he has upped the game. Now he scratches on the screen, Garry goes to let him in and he backs off. No thanks, he says, and if GDW goes out to get him, he dashes off. So GDW comes back in, sits down. Tiny is right back at it, scratching the screen. This morning, took him oh, 5 minutes until he began meowing loudly to get back out. This has now obviously turned into some kind of game for him. I scolded him--couple times ago I threw my grabber stick at him. Now I've cme up with new idea. Get the water spray bottle. Told GDW to show up at the door with it and if Tiny backs off to spray it at him. We need one of you to show up as a cat specialist doctor. Other issue is my appetite. We thought my appetite has just shrunk for now . Now I realize it's not that--it's that I don't have an appetite at all! I was so excited about the big juicy burger I ordered from the Marina, and by the time I finished the 3rd or 4th bite, had no interest whatsoever.
