Caprese Salad

I love it -- something about fresh garden tomatoes, mozzarella and basil which is a food marriage made in heaven. But sometimes I think "outside the box" and do it all in a big bowl with little balls of mozzarella and cherry/grape tomatoes. Still use basil -- still use balsamic and olive oil and salt and pepper! I especially like to use different kinds of tomatoes!

Looks delicious - caprese is one of my favorites as well. I also love a variation with roasted cherry tomatoes, and/or using burrata in place of mozzarella. I generally don't do balsamic unless the tomatoes aren't especially good.

Caprese sandwiches are my favorite. Evoo, balsamic v, tomato, mozzarella, and basil on a crusty loaf. Heaven!

If you want one big batch at once for canning, use a determinate tomato because they're bred to .........uhm.......come on all at once. Tigerellas are indeterminate and that means they continue to grow all season and will produce a smaller fruit set but over a larger period of time. That's sort of like bush beans compared to pole beans. Bush beans produce heavy for a short time period and stop, pole beans produce less prolifically, but all season. I want slicing tomatoes and canning tomatoes so plant both rutgers and marglobe (similar taste and size) but one is determinate and one indeterminate. I am in the process of pulling my vines now, after harvesting over 350 pounds of them with probably another hundred pounds to come.

ccaggiano, I do something very similar but with Brie cheese (guess that's the grown-up version for my kid-free household, LOL!). But I don't even saute the garlic, which makes it even faster (and more garlicky tasting, which is a Good Thing in our house). Just cut some brie into cubes (remove some of the rind if it's an edge piece) and put in a bowl with some crushed garlic, some chopped fresh tomatoes, and a big handful of basil leaves, chopped; drizzle some olive oil over it and sprinkle some salt and fresh-ground pepper. Let sit for 30 minutes to a couple of hours so cheese softens and flavours meld. Cook pasta al dente (I like fettucine for this), drain, and add to bowl. Toss gently, cover and let sit five minutes. Serve. WARNING: Do NOT cook more of this than the amount you want to serve at that meal, because you will go back into the kitchen and eat every last bit no matter how determined you are to leave some to re-heat tomorrow! Well, first of all let me congratulate you on your retirement! 36 years of teaching is quite an accomplishment! I like all your menu items, but I agree with Linda C. To me there are too many, and that's an awful lot of food for a luncheon-type party. I'd be ready for a long nap after that much food! LOL I categorized them below, as I see it. APPETIZERS Chex Party Mix Pretzels Chunky salsa and chips Spinach artichoke Parmesan spread w/assorted crackers Italian salami and crackers Chicken & apple sausage bites Meatballs (crockpot) SALADS Fruit salad Tossed green salad Vegetable "primavera" salad Mozzarella, basil, and Roma tomato "stacks" ENTREES Meat Lasagne Vegetarian Lasagne DESSERTS Peanut butter rice krispie treats Cherry cheesecake Chocolate mousse cake Key Lime pie I think I'd narrow it down to: *4-5 appetizers (Somehow the salsa and chips don't fit with the rest of menu) *one veggie salad and a fruit salad *two lasagnes as main dishes *two desserts I would also add some type of rolls and butter. It's my DH's favorite salad. One issue I had was I loved using the small-leaf basil which is almost impossible to find commercially. Grew it for a while but it was a hassle.

Finally had a brainstorm. I always have homemade pesto in the freezer, made without pine nuts (allergic). I defrost a bit of it, mix it with a little more EVOO, and drizzle it on. A little sprinkling of lemon pepper, since we're on low-salt diets. Works very well.

I make this salad year round by buying the hydroponic Kumato tomatoes in winter. Not as good as heirlooms but a very fine sweet/acid balance. Expensive, but worth it.

Looks great! I do the same thing, but use the little bocconcini that you can get at TJ's or Costco. I also love variations on panzanella, another summer fav.
