Kefir cupcakes

I know a few of you use kefir. My elder DD's birthday was a couple of days ago, and I wanted to surprise her with some cupcakes when she returned from work. I was babysitting, didn't have a car seat for a trip to the store, and we were out of milk. I had some home cultured kefir that had been in the fridge for a couple of days, so I made homemade cupcakes from a recipe I found on the 'net, but used kefir instead of milk. I also added a couple of pinches of baking soda to the baking powder called for in the recipe, since kefir is more acidic than fresh milk.

I used all the home cultured kefir in the batter, but I needed a dairy product for the cooked buttercream frosting. There was a full bottle of store-bought strawberry flavored kefir in the fridge, because my kids won't drink the unsweetened homemade stuff (big babies ;), so I used that in place of the milk in the 'roux' of sugar, flour, and milk, and decreased the sugar by a tablespoon. The delicate pink color disappeared as I cooked the mix, so I added a tiny bit of red gel food coloring after I took it off the burner. Let it cool, added the vanilla and butter as usual, and it whipped up beautifully.

I can't taste the kefir in the cupcake, but the frosting tastes like cream cheese frosting, and it's so heavenly smooth. They were a hit! I dropped pearled sprinkles on some of them--so pretty, but here are the last two--the one without the frosting cone had the frosting piped inside, so that my grandson can take them in his lunch without worrying about a sticky mess. The frosting squished out around the scooped and replaced center.
