Small spinach pies with phyllo? I am phyllo challeged!
Comments (8)Slowlane has described what I have to do now when making 10 x 15 pans of spanakopita. I can no longer find the giant size fillo sheets (14 x 18") in the frozen food section. They're all 9 x 14" inch twin packs. So I end up putting one smaller sheet at one end of my big pan, brush with butter and then place another sheet at the other end. There is overlap in the center, but it doesn't matter as long as I've brushed with butter. When it comes to a moist filling like spanakopita, I always leave some extra dough hanging over the sides of the pan. Once I've placed the bottom sheets and the filling, I fold over the excess to enclose the filling. That way none of the juice escapes during baking. Then more layering for the top. Comments (1)I read your post, got up from my computer, went to the kitchen and created a dessert I've never made before. Inspired by the cream cheese powdered sugar mixture and a few misc dessert cookbooks here is what I ended up with. 1 brick of softened cream cheese (had it out to make some banana bread but ran out of time to do what I planned with it). "some" 3/4 cup? maybe 1/2 cup? powder sugar made 1/2 recipe for banana cream pie filling. which was flour, sugar, milk, (which made the pudding) then added egg yolks, then some butter and vanilla cooled that, then added 3 sliced bananas. whipped up some whip cream (heavy whipping cream, with a tad bit of powder sugar mixed in. Then graham cracker crumbs, melted butter and brown sugar, mixed up. spread about 3/4 of that out on the bottom of a square baking pan, pressed down firm. Then spooned on a layer of the cream cheese, then the banana pudding mixture, then more crumbs, then more cream cheese mixture, toppped off with fresh whipped cream. Bake: 35 min. + cooling: 1 cup butter, softened 1-1/2 cups sugar 2 eggs 1/2 cup plain yogurt 1 teaspoon vanilla extract 2-1/2 cups all-purpose flour 1/4 cup baking cocoa 1 teaspoon baking soda 1/2 teaspoon salt 2 cups shredded zucchini FROSTING: 2/3 cup semisweet chocolate chips 1/2 cup creamy peanut butter In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in yogurt and vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture. Stir in zucchini. Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. For frosting, in a small saucepan, combine chocolate chips and peanut butter. Cook and stir over low heat until smooth. Spread over warm brownies. Cool on a wire rack. Cut into bars.
