I know a lot of you make spinach pie and I'd like to make some tonight for a special dinner for BF. He's been a very good boy lately and spinach pie is one of his favorites! I have all the ingredients.
BUT
My recipe calls for making it in a large baking pan and I don't want that much spinach pie for just the two of us. Plus I dont' have enough spinach for a whole batch. I know the reason for the large baking pan is the size of the phyllo dough that I get in the store. You have to layer the dough in the pan. If I cut the dough sheets in half they will be too small for an 8 inch baking pan, unless there is a way to do it that I'm not thinking of. I'm using pre-prepared frozen phyllo dough.
I have tried phyllo rolls and phyllo triangles and I'm not very good at that. Any type of dough shaping is really hard for me to do.
So those of you who make a lot of phyllo things, is there some EASY small type pie scenario?? I need some serious phyllo help.
