Comments (8)Oil is typically not used in a white cake, they require a solid fat - shortening/butter/coconut oil, or a combination of solid fats (some recipes will include half shortening and half butter - the butter contributes flavor). CAKE 101 - Cakes are classified according to whether or not they contain fat. The majority of cakes are either shortened or unshortened; a third category is chiffon cakes. Shortened cakes are also called butter or conventional cakes and use a solid fat. Examples of shortened cakes include the standard plain white, yellow, chocolate, spice, Bundt, pound cakes, and fruit cakes. The solid fat is combined with the sugar (creamed) until it's light and fluffy and the cake is leavened with chemical leavening. The solid fat contributes to tenderness, volume, moistness, and flavor. Oil coats the flour proteins which prevents them from adhearing to water. This reduces gluten formation and leaves more moisture in the batter. An example of this is a tea bread or quick bread. The addition of a liquid fat (which can be a melted solid fat or a vegetable oil) will result in a heavy and compact cake (think banana bread or pumpkin bread which are quick breads, not cakes). Unshortened cakes, also known as sponge or foam cakes (include angel food), use no fat, but get their volume from beaten egg whites. Chiffon Cakes are a hybrid of shortened and unshortened cakes. The fat, usually from vegetable oil and egg yolks, is combined with foamed egg whites, cake flour, and leavening agents. Common examples include lemon or chocolate chiffon cakes. One of the best white cake recipes is from Betty Crocker - SILVER WHITE CAKE, but it's made with shortening, and you can find the recipe on-line or in all the older Betty Crocker cookbooks (Betty Crocker's Picture Cook Book). California Beet Salad 1 bunch fresh beets icy cold water 1 red onion, diced fresh basil 4 T balsamic vinegar 3 T extra virgin olive oil 1 T sugar pinch of black pepper Cook fresh beets in salted water for 20 minutes or until tender. Rinse beets in icy cold water, cut ends and remove skins. Dice beets, add onion and chopped fresh basil. Combine vinegar, oil, sugar and pepper, whisk teogether. Toss with beets and onion. Here is one I have been meaning to try. I can't find golden beets here, but I am sure it would be awesome with red beets, too! Roasted Beets with Pine Nuts, Dill and Red Onion 2 lb golden beets 1/2 c water 1 c thinly vertically sliced red onion 2 T pine nuts, toasted 1 T fresh dill 2 T red wine vinegar 2 T extra virgin olive oil 1/2 tsp salt 1/4 tsp fresh ground black pepper 1\. Preheat oven to 450F 2\. Leave root and 1 inch of stem on beets, scrub clean with a brush. Place beets in a 13 x 9 baking dish, add water to dish. Cover and bake 40 minutes or until tender. Comments (19)Square or round, they are handy for so many things. Also freeze well before or after filling. I've used the squares for individual lasagna and both shapes for ravioli...spinach, ricotta, parm, basil leaf, sometimes chopped sun dried tomato, olives. It is basically fresh pasta sheets and very easy work with. Pork for gyoza, shrimp for shumai. I have never used both together and never chicken. (a personal unjustified 'ick' factor using raw chicken or turkey ground). When I see 1 tsp fresh ginger I up it to 1 Tbsp. Love ginger. Nice strong homemade vegetable stock w/white miso, Garlic chips, bonito flake, crushed nori flake to the table. Growing baby bok choy on the kitchen deck harvesting now so that would be a good addition to the broth. Made ravioli, gyoza, shumai, in my first apartment 40yrs ago. Must have been in a magazine. Much thinner than America-Italian store bought ravioli, and the packaged 'pot stickers'.
