Comments (17)Oh, I'm sorry you burned yourself. We make the same sandwich, the trick is the two layers of cheese to hold the tomatoes in place in between the grilled bread....I love them. I expected to read you'd burned your mouth! Where was your dishtowel like the one I place down my front when I'm eating that sandwich on the sofa in front of the TV? Plate of course, but you still need the towel. I got a dandy of a behind-the-front-teeth-roof-of -the-mouth burn once but from a frozen pizza. I'd never 'cooked' one, and took a couple out to my SILs beach house to serve when we'd finished digging and cleaning clams. They didn't look bad, and I called for everyone to come for a slice, saying these may not taste at all good once they've started to cool.....then burned the heck out of my mouth. I had a scheduled dentists appointment two days later and he was horrified, said he typically sees that kind of burn from cream soups if at all. Comments (19)Oh man! I am almost drooling. LOL Mine is boring (but still pretty good), and kind of low fat. Well, lower fat. I have one of those pump and spray bottles that you put olive oil in, pump it then spray it in the pan (like Pam). So, first off I spray the skillet / pan with Olive oil. THen when it's nice and hot I lay the first piece of bread (usually whole wheat) down in the pan. Then I put grated cheese on the bread (light / low fat cheese usually a mozerlla + cheddar blend. THen put the top of the bread on the cheese. Lightly spray the top bread with olive oil. Then flip it over to let the other side brown. Really good, and evenly browned. You wouldn't know that it was low fat cheese and low in sat fat. And the olive oil makes it brown very nicely, and you probably use less than a teaspoon of olive oil for the whole sandwich. Probably a lot less than if you buttered the bread. Grilled swiss cheese is amazing! Comments (63)I like roasted red bell pepper soup with grilled cheese. I've heard TJ's is good, but it's super easy to make your own. I add serrano pepper to mine for a little bit of heat. Roasted Red Bell Pepper Soup 2 jars roasted red bell peppers or 4 red bell peppers, roasted, seeded, and peeled 2 tablespoons butter 1/3 cup chopped shallots 2 garlic cloves, minced 1 serrano pepper, minced (optional) 3 cups chicken broth 1/4 cup half & half or heavy cream salt and pepper, to taste lemon wedges Saute shallots, garlic, and serrano in butter until soft. Add red peppers. Cook for 2 or 3 minutes. Add broth, cover and simmer for 20 minutes. Remove from heat. Puree with immersion blender until smooth. Add half & half or cream. Comments (65)I have to add that even though I usually make the recipe I posted above, i grew up with the boxed stuff. And there are times, dark,cold, gloomy times,where nothing but the boxed stuff will hit the spot. It all has its place. Oh, and I think the generic stuff in the box is creamier and cheesier than kraft. Any generic one seems to fit that bill. I do love the blue box though as well.
