How did we miss this? It's also National Grilled Cheese month, a food that deserves a month.

I never make grilled cheese sandwiches because I make soft tacos or quesadillas instead - I've always eaten more tortillas than bread. I do make a Reuben sandwich, however, and recently I started making panini. I generally have a sandwich for lunch, but I seldom take the time to heat or grill it, unless I'm making a Reuben. I do prefer hot sandwiches, however, and so maybe I should start grilling them this month! Today's sandwich was smoked turkey breast, Italian salami, smoked ham, Jarlsberg cheese, tomato, and lettuce on Swedish rye bread. I would have to leave the lettuce off if I grill it.

That is just wrong! If I'm going to do any fried cheese it would be cheese curds. And then probably a half an order, or less. Two years ago at the MN State Fair I bought an order, turned around, asked the mom and kids behind me if I took 3 off the top curds did they want the rest. Of course they did! One less order to buy. They were large curds and I can tell you after eating them with a beer I was glad I gave the rest away. One more curd and I would've had lead gut. I have found a great substitute for fried cheese curds. Costco sells Queso Blanco. The package contains two 1 lb blocks. I slice it 1/4" thick and brown it in a nonstick pan. Yum! It tastes just like fried cheese curds without the grease. I took the whole package (2 lbs) to a party several months ago and cooked it there. The hostess came into the kitchen with the empty tray. She said people have been hovering around the cheese and they have already polished off the entire tray! Out went the last of the cheese and it was devoured within minutes. The few kids that were there absolutely loved it.

The best grilled sandwich I have ever had has a story behind it. The day before Mothers Day in 2002 I got a phone call at 6 in the morning that my Mom had been taken to the hospital and was being prepped for surgery for a blocked bowel. Mom was 92 years old and had a stroke 10 years prior, confined to a wheelchair and diabetic. I was on the road within a half hour for the 110 mile trip to the hospital. My brother got to the hospital about the same time I did. We didn't get there in time to see her before surgery. It was a very long anxious day of worrying, waiting for some positive news. It was a difficult time the surgeon told us after about 5 hours and gave her a 30% chance of making it through the day. Finally at about 7pm we were able to see Mom. She was awake and we were encouraged by her smile and I love you's Then Bob and I allowed ourselves to try to get something to eat. This was a very tiny hospital that was set to close down soon. Just a tiny room was set up where coffee was available along with maybe a cookie or doughnut. There was a grill, but service there closed at 5pm. An aid took pity on us and offered to fix us a cup of coffee and that the best she could offer to eat was a toasted cheese sandwich. It was just that, toast and a slice of cheese, but by far the best I have ever had.

I adore grilled cheese sandwiches and will make any combinations I can think of. One little thing I do that makes people go, "hmmm...and yum" is spread mustard of choice and mayo on the cheese side of the bread, so that when the cheese melts, it gets all creamy with the flavors of mayo and mustard.

Sourdough, rye, or multigrain. Any good melting cheese, vary it up from time to time, or even on the same sandwich. Don't care for Velveeta. (Neither the taste nor the fact that it's cheese "product", not technically cheese. Note the label! ) Sprouts or mushrooms or both. Onions. Other stuff depending on what's in the fridge. Garlic powder sometimes. Oregano or basil. Butter. If it's mostly cheese, it's still grilled cheese. At least according to my parents... I also make open faced (just one slice of bread) and add cheese, other stuff (no butter), bake in oven. That's not grilled, but good. I don't do these much any more as I'm not so interested in bread these days. I like my hamburgers lettuce-wrapped. I can live and thrive without much bread. For me, it's not essential to my food plannings. I buy 2-3 loaves a year, from a dedicated bakery. When I do eat bread, I want it to be quality. Didn't know that grilled cheese and tomato soup was supposed to be a thing until 2-3 years ago. Our family just never liked tomato soup, I guess. And now that I need to limit nightshades, I'll reserve them for menu items that I really appreciate their presence in.

Mmmmmm.... my favorite food - melted cheese on bread, whether grilled cheese sandwich or cheese toast. And here I am without any cheddar! Awk! How did that happen?

I made Dill Bread on Tuesday and that's my favorite bread for grilled cheese or ham/cheese. I also prefer using shredded hard cheese instead of the typical slices; and fresh arepas with a slice of fresh mozzarella is my second favorite grilled cheese sandwich. -Grainlady

I have been craving a grilled cheese and tomato sandwich ever since I read "The Sugar Queen" last month. But I figured I would hold off until I got some "real" tomatoes from the garden. Whew, that's going to be a while, isn't it? I might just have to break down and use those things they call tomatoes at the supermarket.
