Cheddar and provolone, some slices of purple cheroke tomato and a tablespoon or so of home made pesto! Mmmmmmmmm!

2 slices whole wheat bread
1 1/2 teaspoons olive oil
1/2 Granny Smith apple - peeled, cored and thinly sliced
1/3 cup shredded Swiss cheese

Directions
Preheat a skillet over medium heat. Lightly brush one side of each slice of bread with the olive oil. Place 1 slice of bread, olive oil side down into the skillet, and arrange the apple slices evenly over the top. Sprinkle the Swiss cheese over the apple, then top with the remaining slice of bread, olive oil-side up. Cook until the bread is golden brown, then flip the sandwich over, and cook until the other side is golden brown and the cheese has melted, 1 to 2 more minutes.

Ann T, I keep saying that you and I could eat together. Rare beef, fresh bread, you could have all my olives, and just an occasional bit of cheese. I DO love Michigan, I think it's just a couple of miles south of Heaven, as Renee used to tell me. I like our produce because it's fresh, I think it all suffers from long shipment. No way can a peach that was picked from the tree two hours ago at the peak of ripeness be compared to one picked 5 states away, last week, and slightly green so they can ship it successfully. I've also found that, no matter where I am, I like the local stuff best. I am hugely enamoured of peameal bacon, which I ate at a family reunion in Buckhorn, Canada, but I haven't seen it anywhere else, ever. I thoroughly enjoyed the almond champagne with chocolate port I got at the vineyard in California and no matter how I tried to replicate it, I couldn't do as well here. The tangerines lacksboys3 sent and the honeybells gardengrl sent me were far better than anything I've had here. The fresh seafood I got in Maine was far better than any I've had elsewhere, but I still like our Lake Perch and Walleye better here than anywhere else. I'm definitely one of those "eat locally" people. I'm looking forward to our trip to Texas, someplace in Brownsville sells cabrito, which I think is barbequed goat. Yup, definitely gotta try it and expand my food horizons, like I did in California with the sushi. Oh, and Sangria. Gotta try some sangria. Annie

I never make grilled cheese sandwiches because I make soft tacos or quesadillas instead - I've always eaten more tortillas than bread. I do make a Reuben sandwich, however, and recently I started making panini. I generally have a sandwich for lunch, but I seldom take the time to heat or grill it, unless I'm making a Reuben. I do prefer hot sandwiches, however, and so maybe I should start grilling them this month! Today's sandwich was smoked turkey breast, Italian salami, smoked ham, Jarlsberg cheese, tomato, and lettuce on Swedish rye bread. I would have to leave the lettuce off if I grill it. That is just wrong! If I'm going to do any fried cheese it would be cheese curds. And then probably a half an order, or less. Two years ago at the MN State Fair I bought an order, turned around, asked the mom and kids behind me if I took 3 off the top curds did they want the rest. Of course they did! One less order to buy. They were large curds and I can tell you after eating them with a beer I was glad I gave the rest away. One more curd and I would've had lead gut. I have found a great substitute for fried cheese curds. Costco sells Queso Blanco. The package contains two 1 lb blocks. I slice it 1/4" thick and brown it in a nonstick pan. Yum! It tastes just like fried cheese curds without the grease. I took the whole package (2 lbs) to a party several months ago and cooked it there. The hostess came into the kitchen with the empty tray. She said people have been hovering around the cheese and they have already polished off the entire tray! Out went the last of the cheese and it was devoured within minutes. The few kids that were there absolutely loved it.

I like roasted red bell pepper soup with grilled cheese. I've heard TJ's is good, but it's super easy to make your own. I add serrano pepper to mine for a little bit of heat. Roasted Red Bell Pepper Soup 2 jars roasted red bell peppers or 4 red bell peppers, roasted, seeded, and peeled 2 tablespoons butter 1/3 cup chopped shallots 2 garlic cloves, minced 1 serrano pepper, minced (optional) 3 cups chicken broth 1/4 cup half & half or heavy cream salt and pepper, to taste lemon wedges Saute shallots, garlic, and serrano in butter until soft. Add red peppers. Cook for 2 or 3 minutes. Add broth, cover and simmer for 20 minutes. Remove from heat. Puree with immersion blender until smooth. Add half & half or cream. Season with salt and pepper. Serve with lemon wedges. Don’t forget them! The juice adds a wonderful flavor profile to the finished soup.

Well, I tried to see the pan but the video locked up my computer here. I'll have to check it out at home.

Favorite Grilled Cheese? Hmmmm. Probably a slice each of sharp cheddar and provolone with a slice of fresh tomato on homemade honey wheat.

I'd use a Cherokee Purple, nancyjane, but the darned things don't like Michigan very well, or at least not my part. I've managed to get two or three ripe through the years, and this year I planted one in my raised bed in the back yard, right by the desk where it would be sheltered and it got lots of sun. There are some green ones on it, but not one single ripe one. Again.

I'll have to use Mortgage Lifter or White, or maybe a big ole' beefsteak slice...

Home made white...slices Emmenthaler and a slice of beefsteak...or any good meaty tomato. Butter and my electric sandwich grill....

Homemade Dill Bread is our favorite for grilled cheese, or grilled ham and cheese, using shredded cheddar and a slice of Pepper Jack. Provolone works well too, if we're out of Pepper Jack. Tomato on-the-side.

A restaurant near where I worked served grilled cheese with sliced tomato and sweet onion on Texas toast. Oh my gosh!!!! It was delish. I know they used cheddar but I can't remember what the other cheese was.

I recently made one on homemade rye with rosemary goat cheese and vanilla fig preserves.
Definitely a winner, but not for the unadventurous. LOL

and some pieces of sliced Ham.

I use the Wafflebaker, because it makes a nice design.

It is dark, because I make it with Whole Wheat bread.

Lou, I think the waffle look for a grilled cheese sandwich is great fun!

I love a good slice of tomato on my grilled cheese, also. I love dill pickles on the side, so I'm willing to bet I'd like Grainlady's dill bread for a grilled cheese sandwich. I'm another fan of pepperjack, too. Grilled cheese sandwiches are so easy, quick, and fun to eat. My only problem lately is that I get carried away with adding cheese, and tend to add too much, making the sandwich too greasy.

One thing I like to do when making grilled cheese sandwiches is to let some extra cheese fall onto the pan, making sort of cheese chips to go with the sandwiches. I noticed at either Central Market or Whole Foods the other day that they had parmesan crisps for sale for an insane price. They were exactly what I do when I grate extra cheese onto the pan.

Lou, I don't know the answer. It's not scraps, per say, that I know of, but it looks like they grate the cheese onto a silpat, or something like that, and then bake it or toast it somehow to crisp it up.

I just made a couple of grilled cheese sandwiches for DH and I to take on the road for our trip to our farmhouse. I had limited ingredients, but I used swiss cheese, chopped sun dried tomatoes, and goat cheese on mine. On dh's I made it the same way, but also added some lunch meat. They're wrapped in foil and ready to eat once we get out of town and past the construction.

Gotta go - I'm hungry and ready to get to where I can eat my sandwich!

Sally - I believe you are talking about a Frico. I make them quite often too - usually using a good grated Parm. They are lovely with baby greens and herb that have been lightly dressed in a vinaigrette.

There are tone of ideas if you google "Frico"
