Dolly tea cakes

I haven't made a doll cake in decades, but I didn't want to make a
big ol' cake for pre-Mother's Day dinner today and I only had a half
pint of blueberries so cobbler was out. I have six inch cheesecake pans
(not that I use them for cheesecake) so I went looking on the web for a
six inch cake recipe. It seemed easier than cutting down a larger
recipe. I found one for two layers, and cut it in half, then subbed
lemon zest and lemon juice for vanilla and almond extract. It would
have been better with Swan's Down rather than AP, but was a good cake.

I know. I'm supposed to show a picture, but there was no time for
fussing. I never got the trick of pleating parchment to fit a round
pan, but needed it to go up the sides because of the loose bottom to
the pan. I figured just let it be what it is. There were some
interesting looking notches in the edges where the paper got in the way,
but it was fine. I had a jar of boughten lemon curd in the pantry,
some of which went over the top and covered the notches, and then
blueberries all over the top, and mint leaves decorating the base.

It was really pretty and my mother was very happy! And it was just
enough cake for the five of us--each piece about the size of a small
scone--and a piece left over for the one who'll be there tomorrow for
lunch.
I'm going to have to put a little more time into dolly tea cakes.
They're good for grown up teas where a lot of dessert isn't wanted, too.

Do any of you have favorite recipes for a 4-6" single layer cake?
