How to limit size of container trees?

Hello all

Kind of a strange question. I just bought a large (Wagner?) palm tree. The roots were cut back, so it will take a while to recover I'm sure. But I'm wondering what size of pot to put it in. Additionally, I have two olive trees, the older one becoming very large and gangly. These are ornamentals in front of a business shop, so ideally I'd like to keep them at a certain size. I'm sure I can prune back the limbs, but I'm wondering what size of pot to put them in? If I put a very small pot, I suppose it will limit the growth, but it will also root bound the plant to be very difficult to water. If I put a very large pot, won't the tree become colossal? Do you also prune in the roots?

What's the best way to keep the tree and a medium size and healthy?
