Comments (18)Thanks everyone for giving me your ideas. I don't know what kind of clay I have. I only know it's gray, compacted and when we are really dry it literally turns into a cement like material. We bought a shed recently and needed to install those trailer ties to anchor it down. We were trying to dig the holes during a drought. My husband managed to get down about 3 or 4 inches with the post hole digger (remember he was digging these holes right up next to the building so there was no "getting his muscles into it") After getting that far he got a large screw driver and a hammer and tried chiseling with little success. Finally I got the bright idea to put water in the holes. That helped out a lot. Yes Karen, I will probably purchase a wildflower mix suited for my area from a reputable source. Since I am the one doing the bulk of the work on this one, I think I will give the leaves a shot. Hauling sand is just more work than this old bod can handle especially since I have 10 cubic yards of mulch to move. Ugh. Comments (7)It's easier to skim the fat if you let the pot sit in the fridge over night - the fat will solidify. Also - one you skim as much as possible with a spoon - take a piece of clear plastic wrap and sit it on top of the broth - lots of the leftover fat will adhere to the plastic wrap....See Morestock bones from half beef
Comments (7)liz, I've always just asked for "soup bones" and that's how everything comes labeled, whether they are actually marrow bones, knuckle bones, the very bottom of the shank portions, neck bones, whatever. The processors usually cut the bones into pieces that avoid sharp edges that might perforate the shrink wrapped packages, so they don't have to reprocess. When I tell them I make stock from the bones, they gladly leave some meat on them as it is less work than trying to remove it all (or mostly) so I don't have to add the beef scraps, they're already there. I tell them to limit the bones to no more than 35 or 40 pounds, that gives me 6 or 7 good batches of stock, but there are a lot more bones than that in half a beef. If I take only the best, I don't get things like the big joint in the shoulder, parts that are unwieldy and large. There are a lot more than 35 pounds of bones in half a cow, though, even if you keep the short ribs and the porterhouse. You might also consider asking for the heart and tongue to add to your stock, and don't forget the tail. I found this website, it might help answer some of your questions. It says 146 pounds of bone, fat and waste from an 1100+ lb. lean steer. If it's very lean, there might be 20 or 25 pounds of fat trim and waste (sinew, ligaments, etc) leaving you with 120 pounds of bones, or 60 pounds in half a beef. Comments (35)I agree with Coconut: using good chicken or turkey broth can work very well when cooking beef. Because commercial chicken broth tends to be better than commercial beef broth, I'll often use that. (I make beef pot roast using chicken broth.) And Marcella Hazan, the Italian cooking guru, has a recipe in her cookbook made from chicken bones which she simply calls 'meat broth' and uses it freely for poultry or beef dishes. My last pot roast, though, I made using Better than Bullion low sodium beef soup base, and it turned out great. I have Better than Bullion low sodium beef and chicken base, and it seems better than anything I've tried before, but it sounds like Minor's is worth a try. So I'll order some when I run out of this stuff. BTW, when you order from Minor's the shipping is high for the first item, but if you order more than one item the shipping doesn't increase that much. Has anyone tried B-V 'Beefer Upper'? I ran across a reference to this product in Shirley Corriher's "Cookwise" and she speaks highly of it.
