Beef Stock Smell

I used some soup bones to make my first beef stock last week and it seemed to go pretty well. There are 2 things that made me think though:

1. I tried to use part of another reciepe that suggested I carmalize the onion first then add everything else. However, I feel like it has a very strong onion smell when I was finished.

2. There wasn't a ton of fat on the top the next day when I went to skim it. It did seem to have the slightly thick "sheen" that I think is supposed to be there.

I did cool it down properly. I just want my wife to eat it and wondering what I may need to do if the future. No carmalized onion?
