Pump Toad: I put this recipe in about 100 times. Might as well do it again. You can use whatever topping you like. I just spread on some StrawBerry Preserves. - - - - - - - - - - - - - - - - - LOU'S - FLUFFY CHEESECAKE Ingredients: 6 extra large eggs, Separated 1 cup of Vanilla Ice Cream ( softened ) 1 ¼ Cups of Sugar ( ¾ cup for Batter and ½ cup for the Egg Whites ) 1 /4 pound of Butter (softened in micro wave and let cool but still soft) 2 packs of Philadelphia Cream Cheese. ( 16 Oz. )At room temp. 1 tablespoon of Lemon Juice (add another to taste ) 6 heaping Tablespoons of Orange juice 2 teaspoons of Vanilla Favor ( a good brand. ) Grate the skin of one orange , with a hand grater, fine side. ( 2 tablespoons ) OR 1 teaspoon of dried Orange Peel ( I use Mc CormickÂs ) 2 heaping tablespoons of AP flour ¼ cup of Cornstarch I do the Egg Whites first, ( donÂt have to rinse the beaters ) Beat the egg whites, Add the ½ cup of Sugar, A little at a time, at a medium speed for 1 minute. Beat for another 3 minutes, or until they hold stiff peaks. Put aside, until the batter is mixed. In a bowl large enough to hold the batter and beaten egg whites, Beat the Cream Cheese & ¾ cup of Sugar, until smooth Add the 6 egg yolks Lemon juice, Orange Juice, Softened butter, Vanilla flavor, Flour , Ice Cream and grated Orange skin. Beat this for 3 to 4 minutes, until smooth, add Cornstarch and mix on low speed 1 minute. Fold 1/3 of the beaten egg whites into the cake batter, Then fold in the remaining egg whites , very easily but well. Pour this into a 10 inch Spring Form Pan that has a Graham Cracker crust, on the bottom. Wrap the bottom with Allum. Foil, so nothing leaks out Place into a pre heated 320 degree oven on the middle shelf. I use a Baking Stone Bake for about 50 to 55 minutes or until the top is a Golden tan ( not Dark Tan !!! ) Turn the oven off , But leave the cake in, until it cools down. When cooled down, cover the top with Aluminum Foil and refrigerate, for at least 1 hour. You can add a topping of your choice , a Pineapple Sauce, preserves, thickened peach pie filling , etc. OK for freezing. LOU This was baked a little too long but was still great!!!

Here is a recipe I have had since the 70's and it is very good. 1 large 36oz can unsweetened pineapple juice 1 12 oz can frozen orange juice concentrate 1 12 oz can frozen lemonade concentrate 1/2 cup sugar 6 cups water 2 quarts ginger ale or one bottle of champagne dissolve 1/2 cup sugar in 6 cups of water. Add orange juice and lemonade concentrate and amount of water called for on each can. usually 3 cans each add pineapple juice. Pour into containers and freeze. I use old 1/2 gallon milk cartons. This makes 1 and 1/2 gallons mix. When ready to serve, thaw until slushy add the ginger ale or champagne. This can be done in a punch bowl or in a pitcher. I usually use half mixture and half ginger ale when serving if making in a pitcher. Sometimes I make it up and just let it completely thaw in fridge and mix it half and half with ginger ale in a glass for one serving at a time. I have mixed it up and just used it, didn't freeze. Pretty versatile stuff.

Chocolate Turtle Torte Source: St Paul Hotel Crust: 3-2/3 c pecans 1-1/4 c sugar 7T unsalted butter In food processor blend pecans and sugar, add melted butter in steady stream until combined well. Turn out mixture into a 12" tart pan with removable bottom. Press to 1/8" thickness on bottom and 3/8" on sides. Bake at 350F for approximately 20-25 minutes or until lightly toasted. Cool. Filling: 1lb semi sweet chocolate 2 c heavy whipping cream Bring cream to a boil and pour over coarsely chopped chocolate. Mix until chocolate is melted and mixture is combined well. Pour into cooled crust and refrigerate for 3 hours or up to overnite. Caramel Sauce: 4oz unsalted butter 1 c sugar 1 c heavy whipping cream 3/4 c crushed pecans (for garnish) In heavy saucepan melt butter, add sugar and cook until dark brown (not burnt). Add cream and remove from heat. Mix thoroughly until mixture turns a rich golden color. Drizzle over slices of torte and serve. Sandies by the Sea 2 cups all-purpose flour 1/4 teaspoon salt 1 cup (2 sticks) unsalted butter, softened 2/3 cup firmly-packed light brown sugar 1 large egg 1 teaspoon pure vanilla extract 1 cup pecans, lightly toasted and very finely ground* 20 caramel candies 3 tablespoons cream or whole milk 2 to 3 tablespoons large crystal sea salt or fleur de sel, as needed** 1 cup chopped bittersweet chocolate or semisweet chocolate morsels 1.Combine flour and salt in bowl; set aside. 2.In a mixing bowl, cream butter and sugar until light and fluffy. Add egg and vanilla; beat to blend. Add dry ingredients in batches, mixing between each. Stir in ground pecans. Cover and chill dough until firm. 3.Preheat oven to 350�F (175�C). Line baking sheets with parchment paper or butter the sheets. 4.Roll dough into 1-inch balls with floured hands. Fill center of each cookie with approximately 1/2 teaspoons of caramel. Sprinkle warm centers evenly with sea salt, and let sit until firm. 7.Place chocolate in plastic bag in a bowl, heat on medium at 30-second intervals in microwave. Massage between each interval until melted. Cut a small hole in bottom corner of bag, drizzle chocolate across each cookie; add additional salt if desired and allow cookies to sit until chocolate has become firm. Makes about 4 dozen. *To toast pecans, place nuts in a single layer in an ungreased shallow pan. Bake at 350�F (175�C) for 5 to 10 minutes or until golden brown. Remove from pan to cool. Wrap the outside of the pan with foil, covering the bottom and extending up the sides. Make the batter for the sponge cake as the recipe directs. Slide the cake off of the bottom of the pan onto a serving plate. Or if you wish, simply leave the cake on the removable bottom of the pan and place it on a serving plate. If any cake is left over, cover it with plastic wrap and store in the refrigerator. Ingredients for the Macaroon Crunch 1/2 cup chopped mixed nuts (almonds, peacans, and/or walnuts) 1/2 cup angel flake coconut Ingredients for the Strawberry Topping 1 quart large ripe strawberries 1 cup strawberry jelly 1/2 cup apricot preserves Directions for the Fresh Strawberry Cheesecake Preheat the oven to 350 F and butter a 9-inch springform pan. Make and bake the sponge cake layer. Make the cheesecake filling and bake the cake as for Junior's Famous No. 1 Pure Cream Cheesecake. Transfer the baked cake to a wire rack to cool, about 1 hour. While the cake is baking and cooling, make the macaroon crunch: Spread the nuts and coconut on a baking sheet and toast in a 350 F oven until golden and crunchy, about 10 to 15 minutes. Set the crunch aside to cool. To prepare the strawberries: Wash, hull, and sort through the strawberries, then pat them dry with paper towels. Starting at the outside edge of the cheesecake, arrange the berries on their sides, in rows, with ends pointing toward the edge of the cake. Continue until the top of the cake is completely covered by strawberries. Now make the strawberry topping: Melt the strawberry jelly and apricot preserves together in a small saucepan over medium-low heat. Strain and drizzle the warm jelly over the berries. Loosely cover the entire cake with plastic wrap, being careful not to let the glaze stick to the wrap. Refrigerate the cake until it's completely cold, at least 4 hours or overnight. Remove the cake from the pan and serve it chilled. Wrap any leftover cake in plastic wrap and store in the refrigerator.
