Feel overwhelmed and underprep'ed at same time-Normal spring feeling?

Hi everyone, I’ve been lurking here for a little while. Figured I’d share some of my progress/anticipation
for this cold to end!

In zone 6b (on edge of 6a) near Pittsburgh, PA. Modest garden (about 300 sf) that will be
expanded this spring to around 500 sf.
All intensively planted close-quarters raised beds so actual planting
area is around half those numbers. Every
year I seem to jump the gun a little bit/go overboard with seeds and this year
is no different. Photo from last year.

Here is what I have going so far:

Onions (started mid-January). Some were potted up and others were just left
crowded in 72-cell packs at about 8-10 seedlings per cell. The ones that were potted up are obviously
bigger/stronger but I am hoping they all will do well when transplanted. Hoping to harden off next week and plant out
weekend of 3/25, 3/26.

Kale experiment, started late January. Currently in solo cups on window sill. Not looking great, probably need more light.

Peppers (started early-mid February). Just potted up to 3 inch pots this past
weekend. All have one or two sets of
true leaves. Seem to be growing slowly (maybe
temperature in basement is factor – high 50s) which is not a big deal
considering – I realized I have way too many after keeping every plant I could
instead of thinning. I counted over 100
plants in total, I’ll probably only end up planting 24 I and will likely be
giving away/selling to some friends as long as they last. They are taking up a ton of space under the
lights. Nothing too fancy but a few
varieties I havent tried before. Early
Jalepeno, Sweet Habenero, Hungarian Wax, Sweet Banana, Poblano, Douce D’espagne,
Cascabella.

Tomatoes – sowed in 72 cell flat this past weekend at 2-3
seeds per cell. Yellow Pear, Big Boomer
hybrid, Homestead, Roma, Early Girl, Giant Garden Paste, Brandywine, Burpee
Early Pick VF, unknown cherry. Will probably end up same as peppers – too many
and asking people to take them off my hand.
Plan to plant about 24 – 30 plants intensively and heavily pruned on florida weave style supports.

Strawberries (first time trying bareroot) – Earliglow and
Albion. Planted half out directly into
garden with heavy leaf mulch when I received a few weeks ago.. Not sure if they are still alive or frozen solid with all this bitter cold we've been having. Other half was potted up in 3-inch pots which
took off immediately and seem to be doing well. Probably should think about getting them outside soon?

Also have the following sowed indoors this past weekend (some are
probably early and some are probably late from ideal schedule). Basil, Parsley, Cilantro, Dill, Oregano,
Allyssum, Petunias, Marigolds.

Going to be a tough time juggling all the plants under
lights for the next month or so. I hope
to be able to test some early planting under row cover/hoop house (first time I
will be trying that). Last frost date is
usually early-mid May. Still trying to figure out when I will be able to plant stuff out.

Other plans for the garden this year: garlic (winter sowed in January),

start from seed indoors:

cucumbers (picklebush,
burpless, and Alibi) started indoors mid april,

lettuces/kales progressively planted.

Eggplant (will probably start soon).

Direct sown:

zucchini/summer squash, yellow squash, bush beans and
sugar snap peas, carrots, a row of corn (that is mostly just for cornstalks in
the fall), pumpkins,

Any thoughts/input on my plans? It seems like I should probably be thinking
of starting some more things soon outdoors (especially if I plan to utilize hoop
houses) like carrots, peas, lettuces, but Im worried that spring is
not ready to show up yet.
