Comments (17)Happy Birthday Kathy, hope the day goes just great and here's a couple of recipes that you might like. The first one I took to an outdoor picnic last summer and it was a big hit. You don't have to worry about it getting rancid in the heat, either. CORN CHIP CRUNCH INGREDIENTS * 2 bags corn chips (8.75 oz.) * 3 or 4 cups dry roasted peanuts (or any salted nut you prefer) * 6 cups Golden Grahams cereal * 1 cup packed brown sugar * 1 cup dark corn syrup * 1/2 cup butter DIRECTIONS In a large heatproof bowl, combine corn chips, peanuts & Golden Grahams. In a small saucepan, combine the brown sugar, corn syrup and butter. Bring to a boil over medium heat, stirring constantly. Pour over corn chip mixture; toss to coat evenly. Transfer to a greased 15-in. x 11-in. x 2-in. baking pan. Bake at 250 degrees F for 45 minutes; stirring every 15 minutes. Spread onto waxed paper; cool. Break apart and store in airtight containers. Sweet and salty, shiny & pretty. Easy and different! The other recipe is my Tuna Salad. I noticed you might be tired of your version, Kathy. Try this one. A maid for some really rich people gave me this recipe about 35 years ago and I've made mine this way ever since. And I never have any complaints from others either. Tuna Salad Several Cans Tuna (drained) Finely Chopped Celery Finely Chopped Apple Chopped Sweet Pickle Cubes (not pickle relish!) Mayonnaise to taste The apple gives it the best flavor! Comments (19)When I still worked I used to take bentos all the time since there were no readily available food sources near my office. Leaking was not a problem with the ones I had. Www.justbento.com has lots of good ideas, not all of which are Japanese. Maki at Just Bentos also talks about storing a "stash" of bento fillers in the freezer. Other than that, dinner leftovers were my staple. I would also pack bread, filling, and lettuce separately to combine on the spot into a nice, non-soggy sandwich. Also, if you look around a little you can find small packages of real cheese (processed cheese is just industrial (i.e. "cheap") cheese melted with salt -- nothing yucky or chemical added to it despite the name) from France where cheese is more highly respected. A handful of crackers and some fruit will round out a meal. Pink Lady apples resist browning when cut and will be perfect in appearance at lunch time if tossed into a solution of a pinch of Fruit Fresh (vitamin C) and water as you cut them. Comments (30)Thanks, Michael/Lyra! (grin) she's darned expensive and time consuming for an imaginary child, sheesh. Nope, L, no plastic containers of potato salad in the refrigerated section. I suppose I should be grateful, I did find a plastic container of that ground up bologna and pickle with mayonnaise "sandwich spread" once. The grocery store originally had a small bakery and deli, with rotisserie chickens, but apparently those items spoiled before they could be sold and became a big loss, so now I can get a cold pre-cooked chicken on the weekends, donuts only from Sara Lee and sliced lulnch meats and cheeses. They have a small "hot" section" at lunch time, usually chicken strips, corn dogs and pizza rolls. I can get canned Bush's baked beans, though, and ice cream. Two brands, either Country Fresh or Hudsonville. tricia, I never said I was a manager. I'm a Mom and a farmer and at work I'm "Angela, The Pitbull". My employees know their jobs well, so I don't delegate very much, they just do their jobs and I make sure they get paid. I spend most of my time doing legal research, drafting briefs and motions and trying to make sure the criminals get locked up, while simultaneously trying to wipe the images of their abused wives/battered children out of my brain, along with the memory of the autopsy photos and the drunk driving victims. I'm not good at delegating, I'm good at doing whatever needs to be done to help those who need it. That, and I'm good at cooking, so i do what I'm best at. At least I enjoy the cooking!
