Comments (6)Oh hell yeah I'll try that with the Collards too!!! That sounds like the bomb! I've got some pepper-bacon and definatley have the hotsause....habanero baby LOL! I'll try it with just the Olive oil and seasoning next time; how about a little cajun seasoning? I've been using it in the Okra Gumbo on top of the cayenne I add....oh yes it's spicy! Instead of the bell pepper for the trinity I sub with jalapeno or anaheim. Speaking of which, I've been using frozen Okra....but I've got 2 Longhorn seedlings to plant this year, so I may be knocking at your door for some okra cooking/frying tips come summer...deal? I'm ok with it in Gumbo, but as a side I've always cringed. Yup, I'm a northern girl but lived in Dallas and florida when I was introduced to it. Comments (7)Lucky day indeed! Both of your surprises sound great. I made the recipe below for the first time early last week. The comments in upper case are my notes, as is the three star Very Good note at the top. This is a vegetarian recipe, I just happened to have lamb shank meat left over from a restaurant dinner and thought it would be good in the recipe - it was. I don't think that using fresh tomatoes would add anything to this and the tomato juice from the canned ones was a good substitute for the water, although I did add a little more water at the end. The amount of hot smoked paprika that I used gave the dish a gentle kick - you don't need to use that. I do recommend increasing the ginger and cumin to one teaspoon each. I typed out all the fractions so you won't have to change the coding - wish GW would fix that. I think that the small halved eggplants that I used were a very good choice, no bitterness and brushing them with olive oil and lightly charring on a grill pan really added a nice flavor. I cooked this in a heavy stainless steel shallow skillet - covered most of the time but it would be perfect done in your new Le Creuset because it will maintain an even heat. I served it partly over a mix of brown rice and quinoa on dinner plates. I know you'll enjoy your new LC. Lee Eggplant Tagine ***VERY GOOD! Moroccan Stew of Eggplant and Olives Serves 4 Tagines are Moroccan gently simmered meat, fruit and vegetable dishes, flavoured with spices like garlic, cumin, ginger, pepper, saffron and turmeric. What curries are to India, Tajines are to Morocco and North Africa. * 3 tablespoons olive oil * 2 cups chopped onions * 3 cloves garlic, minced * 1 and a half teaspoons paprika USE one half t SMOKED HOT PAPRIKA AND 1t REGULAR SWEET PAPRIKA * one half teaspoon ground ginger USE 1t * one half teaspoon ground cumin seeds USE 1t * 6 plum tomatoes, chopped USE I SMALL CAN 14oz DICED TOMATOES AND JUICE * one half cup water ADD AS NEEDED TO GO WITH JUICE IN TOMATOES * a pinch saffron * 1 1 eggplant, cut into one half inch cubes USE 5-6 VERY SMALL ASIAN EGGPLANTS CUT IN HALF LENGTHWISE, BRUSHED WITH OLIVE OIL AND LIGHTLY CHARRED ON GRILL PAN * one quarter cup raisins * 1 cup greek-style green olives, pitted * to taste freshly ground salt and pepper * 1 cup cooked chickpeas (garbanzo beans) * one half lemon, sliced into 4 wedges * ADDED ABOUT 12 oz COOKED CUBED LAMB SHANK Directions In a heavy saucepan, heat the olive oil and the onions over medium heat. Saute the onions for 5 minutes, stirring frequently. Add the garlic, paprika, ginger and cumin and saute for 2 minutes longer. Add the tomatoes, water, saffron, eggplant, raisins, olives and salt and pepper. Turn the heat to low, and simmer the tagine for 30 minutes. Add the chickpeas to the vegetables. Taste, and adjust the seasonings. Serve in soup crocks over mounds of quinoa or couscous, with a lemon slice on each serving. The "Dad" will not accept that anything is wrong! My friend has him most of the time and is really working with him..even teaching him sign language, because that's the only way he will communicate. Comments (5)Thank you Annie and Dave for the words of encouragement. After doing some serious thinking about it, I wonder if having too much water in the canner caused the problem. I had the empty pints jars in the pressure canner covered with water like I do with BWB to be extra careful on keeping them sterile. When I took the jars out, filled them with soup then returned them to the canner, I didn't remove any of the water so instead of a couple of inches of water, I had it going well over the tops of the filled jars. I think I'll just take a break and stick with BWB recipes for a while like you suggested, Dave. Annie, there was some diced onion and celery along with the chicken along with the stock. I made sure that there was only half veggies and chicken and half broth in each jar. It was the Ball Blue Book recipe. DH was in stage 4 cancer so they removed his right ear and the ear canal. That's when they found microscopic cancer tumors on the lining of his brain. Chemo and another surgery were out of the question so they put him under radiation. He now weighs almost 30 lbs. less than me - arrgh! His last scheduled radiation treatment is next Tuesday and, hopefully we'll get good news from the doctors. He should have been dead many, many years ago due to motorcycle crashes when he was racing them for 8 years, being a Army Ranger in Vietnam, the crash of plane he had reserved to fly then decided not to fly that day and the people who decided to take it up stalled and it killed the four of them plus their dog, his many heart attacks starting when he was 38, even when he had one that lasted 3 days and the doctors said there was nothing more they could do for him, well, you get the idea. Talk about a cat with nine lives, well, we're hoping this continues the streak....See Moremarilyn_c
