Vegetable beef soup sound yummy to me.

I think I'm going to mimic my mother's vegetable soup. Celery, carrots, onions, tomatoes, green beans, butter beans...not sure what else. Oh, and cabbage. Never have bought beef shanks before. Bitter cold here the next few days. High winds and temps only in the teens. Need some comfort food.

Seagrass, that sounds like lovely vegetable soup, I tend to use every vegetable I have on hand so mine is never the same twice. I also like beef barley soup, with some mushrooms, carrots, celery.

If they are nice meaty shanks, though, you would do a kind of riff on osso bucco with those shanks instead of veal, or some braised shanks with mushrooms, onions, garlic, red wine if you like it or beef broth if you don't. They work in the crockpot too, if you have one and have all day.

Annie - I got the soup put together and into my smaller Nesco roaster around 9:00. I'm going to let it cook low and slow all day. The pot is quite full.

Beef stew is always better with homemade biscuits!

Provencal Beef Shank Stew

tablespoon olive oil
2.5lbs bone in Beef Shank, chopped into large pieces
2 medium red onion, sliced
4 large carrots, peeled and sliced
1 1/2 cups red wine
1 big can whole tomatoes, cut up in their juices
a big pinch fennel seeds
1 tablespoon herbs de provence
salt and pepper

In
a large dutch oven heat olive oil on medium and sear beef shanks in batches
until browned all over, remove to a plate. Add onions and cook until
caramelized, stirring regularly. Add carrots, wine, tomatoes, herbs de provence, fennel, beef
shanks, and salt and pepper. Bring to a gentle simmer and simmer for 2-4 hours
or until meat is nice and tender (mine took just under 4 hours.) Serve on top
of a hearty starch (mashed potatoes, risotto etc)

Thanks for those recipes, pkramer. I had not seen beef shanks before, but have cooked veal shanks. Those are so expensive! My soup is done, the beef fell apart in it. We're having cornbread alongside. I've never made biscuits.
