I've just finished dinner. Beef stew. Braised the 1" cubes first, then fried onions, garlic, ginger, chillies. Mixed together. Added local (rough!) red wine, plenty of baby potatoes and carrots, tomatoes, cubed aubergine, green beans, simmered for 5 hours, testing regularly. But the beef showed no signs of softening! Then for last 30 mins, added mushrooms and coriander (cilantro).

It looked and tasted magnificent. But the beef was as tough as shoe leather. The local dogs are feasting right now. (At least it's stopped them barking for a while!)

I bought the beef this morning, and it was cut fresh from the leg of a bullock. I knew it'd need long cooking, but really! Almost 6 hours?

I still have about 2 gallons of the stew left. Would it help break down the meat if I freeze it? Should I have marinated it first?

Am at a total loss...any suggestions gratefully received!
