Comments (2)I've always loved beets and I like borscht a lot. I do like cabbage in mine, and I use beef bones or beef stock as the base. I usually start with home canned beef broth so that negates the need to let the broth simmer then sit so the fat can be skimmed. Borscht Recipe You need: ◦8 cups beef broth ◦1 pound slice of meaty bone-in beef shank ◦1 large onion, peeled, quartered ◦4 large beets, peeled, chopped ◦4 carrots, peeled, chopped ◦1 large russet potato, peeled, cut into 1/2-inch cubes ◦2 cups thinly sliced cabbage ◦3 Tbsp red wine vinegar ◦1 cup sour cream ◦Salt and pepper to taste Preparation: Bring 4 cups of the beef broth, the beef shank, and onion to boil in large pot. Reduce heat, cover, and simmer until meat is tender, about 1 hour 30 minutes. Transfer meat to work surface; trim fat, sinew and bone and discard. Chop meat; cover and chill. Cool broth slightly. Chill in pot until cold, at least 4 hours and up to 1 day. Spoon fat from top of chilled broth and discard. Add remaining 4 cups broth, beets, carrots, and potato; bring to boil. Reduce heat, cover, and simmer until vegetables are tender, about 30 minutes. Stir in meat and cabbage; cook until cabbage is tender, about 15 minutes. Season to taste with salt and pepper. Comments (22)Just as sleeperblues shared, Aldi had a boxed mix, and it wouldn't surprise me if they move it to the clearance rack after this week - so get there fast if you want a boxed mix. Hubby's favorite is "Milo O'Sullivan's Currant-Nutmeg Soda Bread", but also manages to choke-down "Whole-Meal Irish Soda Bread". If St. Patrick's Day falls on a Friday or Saturday, we have a hooley (party) and I bake at least 3 or 4 kinds of soda bread. Our favorite is a traditional Irish scone "Oat Farls" (that's an "L" between the r and s, not a "T" ;-) and are similar to Scottish oatcakes. Thankfully, I managed to adapt it to a gluten-free version and that's what we had for breakfast on St. Patrick's Day. This King Arthur Flour recipe is also a favorite, and easy to make - and are best made with currents, not raisins. This recipe is especially good if you are feeding a lot of people, and it keeps better than soda bread. Soft, cozy, warm, fits over your shoulders and keeps you toasty from head to toe, open in the front (had something that went over my head years ago, but didn't like that), wearable so you don't go from cozy warm to freezing if you have to get up and get a drink from the kitchen.
