We were n NYC over the weekend and went to dinner at a Ukrainian place. The pirogi's were excellent. But, interestingly enough, they served red cabbage, but cold. I have always had it cooked, sweet and sour.

My DH had the apple pancakes. (Breakfast for dinner) and they were really good too.

We always have pancakes on Shrove Tuesday -- often for breakfast and I'm having some friends over for a Fat Tuesday lunch of red beans and rice, cornbread and bread pudding and that evening one of my ladies groups will be hosting a Mardi Gras Party with all kinds of New Orleans food and wine. So we celebrate big!

I have never heard of pazcki before reading some of these comments. Guess they are not a big west coast thing :-)

In my younger days we used to celebrate Fat Tuesday by bar hopping! Kind of our own localized Mardi Gras! But I outgrew that practice and things tended to get a bit out of control (there was actually a large riot one year) so the authorities cracked down on the celebration and it is pretty much a non-event now.

My big Lenten treat - really end of Lent - are hot cross buns!! Shades of my British upbringing :-) Hard to find and often not as true to type as they should be but still delicious. One day I might try to make my own.

Growing up we called it Pancake Day and that's what we would have for lunch. Mom would put coins inside our pancakes.

I had never heard of Pazcki till I moved to the Detroit area of Michigan in the early 1990's. The heavy Polish population there celebrated Shrove Tuesday and the eating of those filled "Poonch-key" (as Pazcki is pronounced there) in a very big way. Just glorified doughnuts really, but worth breaking a diet for once a year.

I am guessing that Pazcki are a type of jelly filled doughnut. My DM used to make these and they were so delicious, we would practically inhale them! With a large family, she had to make a large batch.

I'd never heard of Pazcki. :0) Probably eating simple, fast to cook when I get home at 7pm food.

Well I bet you can guess my answer! Of course we always do. In fact I am having a Mardi Gras dinner tonight my neighbors are coming and I have a pretty king cake for dessert. I don't just celebrate one day.

I have never heard of pazcki it's definitely not Cajun lol. I would try it though.

I don't know yet for sure but I think I will either make shrimp creole or my kickin shrimp pasta for fat Tuesday. I have shrimp so we shall see.

I will save one of my paczki to eat on either Mon or Tues. That's the extent of my celebration.

We will be in Vegas, so, I'm sure we will!

Never heard of Paczki either.....we always had Hot Cross Buns on Shrove Tuesday when we were kids, but I must admit, I never continued the tradition.

I'm fasting from all sweets for Lent so yes, I will definitely indulge on Mardi Gras! We have a local bakery here in MN that has wonderful KIng Cakes, so that may be what I go for. On the other hand, a Snickers bar or two would do it too...

Gyr, Fat Tuesday is the English translation of Mardi Gras. Mardi =Tuesday, Gras =Fat. People all over the world celebrate it lol. Even if you aren't religious you can celebrate Mardi Gras. You might get religion at some of the Mardi Gras parties around New Orleans lol. Here they are having big Mardi Gras celebrations happening in Galveston at the beach, the strand, the pleasure pier, it's all a big party.

Shrove Tuesday (or Mardi Gras) isn't a religious day. The next day, Ash Wednesday, is as the start of Lent.

There's not much to Mardi Gras in my area. Events seem to be tailored to urban bar hopping, single 20-somethings. (The same crowd bars try to attract with St Patrick's Day events).

Otherwise, the day comes and goes without much attention, it's easy to miss. I suspect some still may follow quiet family Lenten traditions in their homes but again, it's low profile. Church influence is waning around here and for most, the time leading up to Easter is just another time of the year without particular significance and the events are days like any other.

I saw an ad for Paczki in a store flyer today, but have no idea what it is - didn't check it out. Maybe should pick some up on the next visit.

Shrove Tuesday is Pancake Supper time around here - a gathering to be at both churches that I attend, the Scouts (formerly Boy Scouts) usually prepare it at the suburban church.

With maple syrup, of course, usually sausages, maybe salad.

we have a huge Polish area here in Detroit and it's their creation...extra rich filled donuts and only made here for about a week...they'll have a line out of every bakery in Hamtramk (sp) near downtown Detroit...krogers makes a version but don't think they're as rich?

Y'all have saved my life. I couldn't think of what to make my dad for lunch tomorrow (they're coming to visit). Sol's gumbo it is!

Seafood Gumbo

2 medium onions, finely chopped (about 2 cups)
1 medium green bell pepper, chopped (about 1½ cups)
2 small stalks of celery, trimmed and chopped (1 cup)
2 tablespoons chopped garlic
1 teaspoon salt, or more to taste (add additional salt only toward end of cooking)
1 tablespoon ground black pepper
½ teaspoon cayenne pepper*
1 tablespoon dried thyme, or 2 tablespoons fresh thyme
1½ teaspoons dried oregano, or 1 tablespoon fresh
2 tablespoons fresh basil
¾ cup canola oil
1 cup AP flour, or more if needed
5 to 6 cups homemade fish stock, but chicken stock will do**
1 pound andouille (or other spicy sausage), sliced
1 pound crabmeat
2 pounds shrimp or crawfish
Cooked rice

In a Dutch oven, brown the andouille sausage, or meat of your choosing. Remove the sausage from the Dutch oven, and set aside.

To
make the roux, heat the canola oil in the same Dutch oven over
medium-high heat. When oil is hot, add the flour. Whisk constantly,
until roux reaches a dark brown color, resembling chocolate
buttercream. The whole process will take about 20 minutes.
When the roux is dark and thick, add the vegetables and spices. Stir for a few more minutes to soften vegetables.

Stir
the fish (or chicken) stock into the roux and vegetable mixture. Bring
to a simmer. Add the sausage, and simmer with the pot mostly covered for
about 1 hour.
Gently stir in the crabmeat, and shrimp (or crawfish) during the last 3-5 minutes of cooking.

*You
can substitute Kielbasa for the spicy Andouille sausage. If using the
former, you might want to increase the cayenne pepper. But taste first,
before adding more heat

I remember paczki from my childhood in a Polish neighborhood and church. This year I will be too busy recovering form my lumpectomy surgery to celebrate anything.

I'll eat a bunch of candy and have a big meal on Tuesday because on Ash Wednesday I fast.

My maternal grandparents were Polish and came over from the old country. My Mother never fixed any kind of Polish food and I never even heard of Paczki until a few years ago. Meijer makes many flavors of fillings, Bavarian cream, prune, blueberry, strawberry, raspberry, lemon, cherry, cheese, apple and lemon. Growing up we did not celebrate or have anything special at that time of the year.. Christmas and Easter were about the only times we celebrated. Never even celebrated Thanksgiving.

I've already had Hot Cross Buns. I love them. The paczki are in the stores, too. They are not sliced open. They are like jelly donuts. Some have Bavarian crème filling.
