I don't care for frozen fish, but I like chicken filets or fingers. I dip chicken breasts pounded out whole or in strips in seasoned flour, egg and fresh made bread crumbs seasoned with fresh grated parmesan. Freeze on parchment covered trays. When frozen, package in freezer containers or freezer bags.

Jasdip, it's because you Canuckleheads are gonna pour maple syrup on everything, so no spice for you! :D The other curious difference is Canada has square plastic ice cream pails while the US insists on round. The square ones make more sense to me. I always forget to put a paper towel in the bag but as long as I open the bag as soon as I pull it out of the freezer or do something to dissipate the moisture it's been fine. If you leave it in the bag, the water will make the crust (or the bread itself if sliced) mushy and like fresh puss from an infection. Perhaps it'll stick to the bag if you blow extra air in there so it doesn't come in contact with the bread but then you compound the issue too. I've always had trouble when leaving it in the bag. Never a problem when I take it out or at least change containers and I always try to get as much air out of the bag as I can and use it relatively quickly.

Thanks for the input. Tricia, I never thought of just measuring the amount of water each pan holds. Duh! Fori, I know I have an 8x8 pan on hand. Not sure about a 9x9. I will try an 8x8 pan first. Then work from there. I went shopping today and picked up some ripe bananas for banana bread and some greenish ones for eating. I'd like to give the banana bread a try tomorrow.

Well, here's another opinion... Refrigerating bread? Not any more. I'll leave it out first. Refrigerators tend to dry it out. Freezing it will keep it better. And I agree that it's not the method to freeze, but the thawing but after that I disagree. What I've experienced is thawing it in the bag the condensation gets on the bread. Take a loaf and put a tablespoon or so of water in the bag and leave it sit. See if it clings to the wrapper. I'll bet it won't! I either leave the bag open a while to evaporate the excess moisture or pull the bread out of the bag and let the bag dry, or I'll take a dry bag and transfer it. Bread thaws quickly, especially if it's sliced and you pull it apart. I've never tried the paper towel thing but I'd guess that would help keep the excess moisture away from the bread.
